Clark's Quiche

This quiche is absolutely amazing!! Even my French husband loves it. I did make a couple small changes due to availability and halved the recipe to make one quiche, but man, thank you so much Clark!! I wish I could make this every week!

Yummy Veggie Omelet

Lentil Stuffed Tomatoes

Like someone suggested before, I replaced the mint with cilantro and added some cumin to the stuffing. Both my husband and I enjoy it and we eat it pretty regularly now!

Chicken Fiesta Salad

Absolutely loved this recipe! I substituted red beans for black beans (because I can't find them in a can here) and next time I'll use mild salsa (the store only had hot and I was in a hurry... I'll be more patient next time!). Thanks very much!

April's Chicken Fried Rice

I really enjoyed this recipe! I made two small changes - I cooked 1 1/2 cups of rice and I cooked it in water boiled with a low-fat chicken bouillion cube. I did use a bit more soy sauce (that's up to what you like, however) and next time I may use half a regular yellow onion instead of a whole one (green onions are difficult to find here). Thanks!

Mexican Soup

Wow, what a great dish! The only changes made were to increase the chicken stock to 3 cups (it cooks down very fast on a gas stove) and I can't get green chiles here, so I omited that. Was still spicy and flavorful. Thanks!

Holy Smoked Bacon and Mushroom Penne

We enjoyed this very much! I did make some of the suggested changes - 2 cups of chicken broth and 1/2 cup of white wine, and I undercooked everything so it would finish cooking as the sauce reduced. By keeping the heat on medium, the didn't take long to reduce at all. Really gorgeous flavor. Thanks!

Basil Chicken over Angel Hair

I enjoyed this dish very much! The only change I made was to add an extra clove of garlic. Since my husband doesn't like angel hair pasta, I will make this again with a different pasta. Thanks for this recipe!

Tomato-Curry Lentil Stew

I followed other reviews and used chicken broth and fresh tomatos, and we absolutely loved this dish! Next time we will add some chicken or sausage for a more complete meal.
