Cod with Italian Crumb Topping

I made this twice. The first time I forgot the cheese and added the second time I made it. I think I like it best without the cheese. My husband had seconds the first time I made it, but wasn't so impressed the second time. So I'll continue to make it, but I'll still work with it to incorporate the cheese somehow.

Quick and Easy Chicken

This was good for a really quick meal. I did what other reviewers suggested and doubled/tripled the sauce (I just eyeballed it to taste). This was good with some rice and veggies. My husband will probably eat the leftovers for lunch. Will definitely place this in rotation for weeknight meals.

Best Spanish Rice

This was so fast and easy to make. It's also delicious. I followed the recipe exactly and it was perfect. The rice was fluffy and tender like I expected Spanish rice to be. I garnished it with some fresh chopped cilantro. I'll make this again with the beef enchiladas from this website.

Custard Bread Pudding

I wanted to try a different bread pudding from the one I usually make and decided I would make this for Christmas. I'm not sure that I like so much custard. My mother felt the same way I did, but my sister RAVED about it. She asked for the recipe and she can have it. It was good...I just don't like so much custard. I will continue to make my usual bread pudding and keep looking for something less custard-y.

Ground Beef Enchiladas

I will make these again and again. They are so good! That sauce is unbelievably good! I did make some changes as other reviewers suggested and based on my own personal tastes. Husband HATES jalapenos, so I used a can of green chilies, sour cream versus yogurt and added a can of Rotel tomatoes, monterey jack versus mozzarella and lastly, flour tortillas instead of corn. I did spray the pan with some oil before rolling the tortillas so they wouldn't stick (had that issue before....not pretty!). Made the Best Spanish Rice from this website as a side dish. I could've gorged myself. Next time I will add some black beans as a side as well.

Honey Garlic Chicken Wings

These were very good and very easy to make. I marinated them for one hour, but next time I think I will marinate overnight. I doubled the ingredients and the flavor was spot on!! They weren't overly sweet and the soy sauce did not overpower the other flavors. I did add a little season salt and pepper, but that's just because I like my meat seasoned. My husband had seconds and thirds! He'll be looking for these most weekends. Thanks for a simple and delicious recipe!

Fluffy French Toast

This was sooooo good! I woke up New Year's Day wanting something sweet and had a extra loaf of French bread and then found this recipe. Oh My! I did as some reviewers suggested and used brown sugar in lieu of the white sugar. Then I added some extra cinnamon at the end. The mixture made just enough for the 11 slices of French breads I cut which were about 1 inch thick. More than enough for my husband and myself so I will freeze the remainder. Will use this again and again. Extra good with a sprinkling of powdered sugar!

Caramel Sauce

Read all the reviews and went ahead and prepared as stated. Nothing exploded and I didn't turn the can either. I didn't even have to top off the can with more water. Just got super creamy smooth caramel. LOVE IT!!! No more store bought caramel for me.

Creamy Banana Pudding

I am not a banana pudding person (don't like bananas too well), but my new husband is. So I attempted to make one and found this recipe that so many raved about. I made this and now I can do no wrong in my husband's eyes. (that's a good thing! LOL) I tasted it myself and I may even have to start liking it (just the pudding and the cookies anyway!) I only had french vanilla pudding, but otherwise followed the recipe and it was perfect!!! My husband said not to make this too often, he didn't want to lose his manly figure! LOL!!

Zucchini Saute

I loved this dish and thumbs up to the reviewer who suggested sprinkling salt on the veggies to squeeze out the moisture. It made the dish. I used both zucchini and yellow squash. Like some reviewers, I just used canned diced tomatoes with garlic and onion and OMG this will be my to to veggie dish from now on. So easy and so good and makes pretty presentation as well. It's very low calorie, but I had to make myself stop eating it before I served it for dinner. My husband LOVED it!

Apple Dump Cake

OMG!!!! This was sooooo good! I have heard of dump cakes before, but I didn't imagine they would be very good. I wanted something quick and sweet and found this recipe. I did, however, add some more spices and flavorings . I added a lot more butter on top of the apples and then on the cake mix. On top of the apples, I added cinnamon, allspice, nutmeg, some sugar (1/4 cup), some brown sugar and about a tsp of vanilla. This stuff is the Devil!! It's just sooo good. We had it with some ice cream and it hit the sweet spot. I cannot keep this in my house otherwise, I will eat all of it all the time. Nice fall back recipe for those "want something sweet" moments.

Creamed Spinach III

I like this recipe, but I had to make some changes due to what I had on hand. I chopped a small shallot and sauteed that with some garlic in some butter and olive oil. I don't always measure stuff so I just wing it. I didn't have heavy cream, so I concocted some from reading what other reviewers suggested by mixing 3/4 cup milk (2%) and 1/4 cup melted butter. I added a TBSP of flour and a couple shakes of nutmeg and let it thicken, then I added a 16 ox box of fresh spinach. My husband loved it!! I will be making this again, but I will use real heavy cream next time. It was really good!

Chicken Marsala

This recipe was very good, but worked better with a few adjustments. If you want bland, cook as-is. If you want tastier, add a few more ingredients, like a few cloves of garlic and sliced onions when you cook the mushrooms. I also had to add more salt and used some fresh chopped parsley. I had three chicken breasts that were really thick, so I sliced them down the middle and had six breasts. I had fettucine on hand, but it would work just as well with angel hair or rice. I will place this in rotation with my changes. Thanks!

Rainbow Pasta Salad

With the summer heatwave on, I wanted a cool refreshing and delicious pasta recipe that was quick and simple. JACKPOT!! I omitted the corn, and added feta cheese and tuna in evoo. It needed more artichokes IMHO, so I added another jar. My daughter also wanted more broccoli which I will add the next time I make it, and there will be a next time. We ate some before it was chilled and had to stop ourselves from devouring it. The flavors work really well together. Thanks!!

Taco Salad II

This is a keeper. My daughter loved this salad and always asks for it. Very refreshing even without the meat. I usually use a southwestern spicy dressing in lieu of the french dressing.

Southwestern Caesar Salad

OMG!!! This salad is sooooo good!! I prepared it for a family outing and we couldn't stop eating it. The dressing is ABSOLUTE FABULOUSNESS!! The right amount of spicy and sweet and crunch from the chipotle peppers, mayo/mustard and bell peppers. I added tomatoes, avocado, corn and black beans to the mix. I will definitely be making this again and again!!

Salmon and Spinach Fettuccine

This is an awesome dish! Very flavorful! I made some of the adjustments suggested by other reviewers like the sauteed shallots, garlic and white wine. I think I may use heavy cream next time instead of the milk just for a creamier consistency. I won't worry about the calorie count since I won't be eating this all the time, but I will be making it again. Thanks!
