Apple Dump Cake

OMG!!!! This was sooooo good! I have heard of dump cakes before, but I didn't imagine they would be very good. I wanted something quick and sweet and found this recipe. I did, however, add some more spices and flavorings . I added a lot more butter on top of the apples and then on the cake mix. On top of the apples, I added cinnamon, allspice, nutmeg, some sugar (1/4 cup), some brown sugar and about a tsp of vanilla. This stuff is the Devil!! It's just sooo good. We had it with some ice cream and it hit the sweet spot. I cannot keep this in my house otherwise, I will eat all of it all the time. Nice fall back recipe for those "want something sweet" moments.

Creamed Spinach III

I like this recipe, but I had to make some changes due to what I had on hand. I chopped a small shallot and sauteed that with some garlic in some butter and olive oil. I don't always measure stuff so I just wing it. I didn't have heavy cream, so I concocted some from reading what other reviewers suggested by mixing 3/4 cup milk (2%) and 1/4 cup melted butter. I added a TBSP of flour and a couple shakes of nutmeg and let it thicken, then I added a 16 ox box of fresh spinach. My husband loved it!! I will be making this again, but I will use real heavy cream next time. It was really good!

Chicken Marsala

This recipe was very good, but worked better with a few adjustments. If you want bland, cook as-is. If you want tastier, add a few more ingredients, like a few cloves of garlic and sliced onions when you cook the mushrooms. I also had to add more salt and used some fresh chopped parsley. I had three chicken breasts that were really thick, so I sliced them down the middle and had six breasts. I had fettucine on hand, but it would work just as well with angel hair or rice. I will place this in rotation with my changes. Thanks!

Rainbow Pasta Salad

With the summer heatwave on, I wanted a cool refreshing and delicious pasta recipe that was quick and simple. JACKPOT!! I omitted the corn, and added feta cheese and tuna in evoo. It needed more artichokes IMHO, so I added another jar. My daughter also wanted more broccoli which I will add the next time I make it, and there will be a next time. We ate some before it was chilled and had to stop ourselves from devouring it. The flavors work really well together. Thanks!!

Taco Salad II

This is a keeper. My daughter loved this salad and always asks for it. Very refreshing even without the meat. I usually use a southwestern spicy dressing in lieu of the french dressing.

Southwestern Caesar Salad

OMG!!! This salad is sooooo good!! I prepared it for a family outing and we couldn't stop eating it. The dressing is ABSOLUTE FABULOUSNESS!! The right amount of spicy and sweet and crunch from the chipotle peppers, mayo/mustard and bell peppers. I added tomatoes, avocado, corn and black beans to the mix. I will definitely be making this again and again!!

Salmon and Spinach Fettuccine

This is an awesome dish! Very flavorful! I made some of the adjustments suggested by other reviewers like the sauteed shallots, garlic and white wine. I think I may use heavy cream next time instead of the milk just for a creamier consistency. I won't worry about the calorie count since I won't be eating this all the time, but I will be making it again. Thanks!

Corn and Black Bean Salad

This stuff is absolutely wonderful! The mixture of flavors is great. I made it for Memorial Day and the fam just ate it up. I had to hide some away for myself!! I added some cherry tomatoes and thinly sliced red onions as other reviewers suggested. Next time, I will add some avocado. I will be making this all the time this summer! Thanks!

Easy Chicken Tetrazzini

This was delicious and very easy to make. I did take some other reviewers suggestions though. I used cream of mushroom soup because I didn't have cream of chicken. Added half a medium onion and a little garlic. I also used chicken broth and sherry versus the water and bouillon. I used a Mexican cheese blend instead cheddar because that's all I had, and mixed that in with the chicken, pasta and sauce. I used some Italian bread crumbs for the topping to bake. This is really great with a side salad.

Cabbage and Kielbasa

I really love this dish! I took the advice of some of the other reviewers and used some new red potatoes and used red wine instead of the water. Next time I will use more potatoes. I also added some minced garlic and a dash of thyme and basil. My boyfriend showed up and devoured it. It's a great meal and I will definitely be making this again! Thanks for the recipe

Creamed Spinach II

I made this for Christmas dinner and it was a great hit! I had to triple the recipe for the amount of guests, but they devoured it so much so that there weren't leftovers. I took some of the other reviewers suggestions and added some garlic, onion, heavy cream, etc. It was delicious and will make this a lot! Thanks a lot for the recipe!

Breakfast Casserole II

I made this for the office and everyone raved about it. I added some other ingredients based on other reviewers' suggestions. I added sauteed mushrooms and shredded hashbrowns with onions and peppers. This was a big hit and I will definitely be making it again for my own family. Thanks for the great recipe.

Creamy Rice Pudding

I have never had rice pudding nor do I ever recall seeing what rice pudding is supposed to look like, but I tried this recipe because my boyfriend loves it and everyone raved about this particular dessert. Well, he didn't like it at all! I added another 1/4 cup of sugar because I like desserts to be sweet. He thought it still wasn't sweet enough. Because I have never had rice pudding before, I didn't know what the consistency should look like or taste like. I tried it when it was still warm and I thought it tasted pretty good, withthe cinnamon and nutmeg sprinkled on it, although it could have been sweeter. As it cooled it became too "gummy" according to my boyfriend upon which I promptly threw it in the trash. I will have to try something different next time. Sorry!

Two-Cheese Spinach Bake

This was very good, but I only gave it 4 stars because it was a little dry after baking in the oven and following the recipe exactly. It needs something to keep it more moist even when you eat the next day. But it is very easy to make and quick. I used canned spinach because it was what I had in the house. I will use this recipe again, but will have to find something to keep it moist.

Roasted New Red Potatoes

These were wonderful and so simple to make. I just added some garlic and onion powder to the seasoning mix along with some oregano to taste. I also sprayed the pan with some non-stick cooking spray. Delicious! I will make these again soon!

Sage Pork Chops

This is a really good recipe. I used beef broth instead of the boullion cubes (didn't have any on hand). I also added some sliced onions and mushrooms with the broth and covered the chops. I also cooked some roasted red potatoes from this site. Yummy!!! Will make it again, and again.

Southern Fried Cabbage

I like this recipe for its simplicity, and I took some of the other reviewers suggestions and omitted the oil and doubled the bacon. It was still TOO greasy for my taste. I will make it again, but next time I will cut back on the bacon and cover the pan while it fries to seal in the flavors at bit.

Baby Carrots with Dill Butter

This dish was very good as is. I didn't change a thing. I'm used to having candied carrots, but this dish was so much healthier and tastier. The fresh dill brought out the natural flavor of the carrots. I will definitely make this again.
