Granny's Banana Bread

This was EXCELLENT! It was very moist and flavorful. The spices were a really nice addition, and you could certainly taste the nutmeg/cinnamon. I hate to have deviated from the recipe, but I only had two bananas, so their contribution was pretty mild. I also did half whole-wheat flour and half regular flour. Combining this with the optional walnuts/craisins, the bread was wonderfully hearty. My family really enjoyed this and I'm sure I'll be making it again.

Eggplant Tomato Bake

This is a simple recipe and turned out just great. However, I would recommend the changes made by other reviewers. Don't take this at face value - treat it as something basic to be modified per your personal preferences. Here at my house, I mixed up some salt & pepper, garlic powder, and dried basil flakes to shake on top halfway through the baking. It was a great addition.

Best Strawberry Daiquiri

This was perfect! The only change I might recommend is to use crushed ice rather than cubes. This took our Osterizer out for a ride, but the drinks were well worth the hassle!

Cinnamon Sugar Butter Cookies II

Great recipe, and very flexible! The cookies were soft the first day, but crisp the second. I was able to roll them in cinnamon-sugar, sugar, or just leave them plain. Just make sure to be careful about the bottoms - the cinnamon-sugar mixture can burn if you bake them too long.

Golden Sweet Cornbread

Due to kitchen limitations, I had to cut the recipe in half. I opted for 1 single-serve cup of applesauce and 3 tbsp of canola oil instead of the recipe's oil and egg. With a few drops of vanilla extract added to make it fragrant, the cornbread was beautifully golden after 15 minutes. The inside was soft and sweet, and the edges were crunchy from the pan. I'd make this again.

Egg-Free Low-Fat Oatmeal Cookies

I followed SUCCUBUS' recommendation and added two tablespoons of peanut butter to these cookies. They smelled so great that I couldn't wait for them to cool down and burned my fingers trying to sample one! All of the roommates have given rave reviews. I'll make these again for sure :)

Golden Orange Frosting

This frosting tasted great, hardened on the outside, and kept soft on the inside. However... it was EXTREMELY unpleasant to make and work with. It was very stiff and we had to add a lot of liquid to make it workable.

Banana Oat Muffins

Great balance of sweet and salty here! I added the crumb topping from the "Banana Crumb Muffins" recipe. In general, the banana flavor isn't overwhelming yet you can smell it in the muffins. Actually, the whole house smelled pretty amazing. Thanks for the great recipe!

Delicious Raspberry Oatmeal Cookie Bars

I bake something weekly for my coworkers, and this week I baked these bars. I used blueberry jam, baked it in a circular pan, and cut it like a coffee cake. I drizzled it decoratively with some almond-flavored icing, too. I was treated to such comments as, "Absolutely sinful.", "It's unfair how good these are." and "This is the best thing you've ever baked." With those kinds of reviews, I'd say this recipe deserves five stars alright!

Chocolate Peanut Butter Bars IV

Fantastic! I assembled these for my coworkers and they all really loved them. They just had to know what made the crunch in the peanut butter; nobody guessed graham cracker crumbs. These are great served cold with coffee - like a Butterfinger candy bar. Thank you for the great recipe!

Award Winning Soft Chocolate Chip Cookies

I made the recommended modifications: 2 tbsp vanilla extract, 1/2 tsp salt, 2 tsp baking powder. The recipe yielded soft (yes, cake-like) cookies that looked beautiful. My roommate thought they tasted buttery when hot, but my coworkers ate the whole batch. I think they were pretty great.

Spanish String Beans

We added some vegetarian sausage to this, and everyone loved it. It's mildly sweet, with a great flavor from the cloves. I'd be happy to make it again. One warning, however: the string beans took twenty minutes to cook. I would advise steaming them instead.

Spanish Hominy

I actually neglected to see that this was supposed to be cooked for 6 hours, and only left it over heat for about a half hour. It was still great. So, don't let the cooking time scare you - you can make this flavorful dish in a much shorter amount of time! We also made this with vegetarian bacon, and it was still a hit.

Tempeh Fajitas

To make this, I marinated the tempeh in the lime/soy sauce mixture before sauteeing. It turned out really well - not too salty, and not too acidic. We had this with blue corn chips and guacamole. Thanks for the recipe! :)

Tofu Parmigiana

This was very delicious! Everyone who tried it loved the flavor of the sauce and the texture of the tofu. Unfortunately, it was kind of a hassle to make - the breading didn't really stick to the tofu. Make sure that you pat the breading on pretty tightly before you drop each slice into the oil.

Molasses Cookies

Very good! These seemed undercooked when they hit the 8 and 10 minute marks, so I ended up cooking them a little longer. They were crispy and buttery, with a mildly spicy zip. I'll be making them again :)

Pumpkin Pancakes

These were great - low in fat, not too sweet, and really easy to make! I loved that they had more of a cake-like texture than other pancakes I've made. I'll be making this recipe again for the winter holidays :)

Cherry Cobbler I

Pretty much amazing. After 10 minutes in the oven, I sprinkled the cobbler with old-fashioned oats. It came out perfectly... thanks for the recipe; I'll be using it again!
