Southwestern Pasta Salad

Tasty and pretty! Pretty oily, I'd use a full box of pasta next time and increase the lime juice and decrease the oil. A nice summer dinner with leftovers for lunch!

We had this for our very easy, 3 person Thanksgiving dinner and it was delicious. My dad said it was the best roast he had ever had. I halved the recipe, cooked on high for 1.5 hours, then on low for another 6 or 6.5 hours. My only complaint was that it was a little salty. I think maybe I should have used low sodium soup. We will definitely make this again!

Swiss Chicken Casserole II

My mom used to make this chicken when I was a kid, so when I saw this recipe I had to try it. It was just as good as I remembered, even though I forgot to cover the chicken (oops). This was super easy, so that was a plus, too. Nostalgia always makes food taste better!

Garlic Teriyaki Edamame

This was good and fairly simple, too. The teriyaki sauce I bought had sesame seeds in it, so that made this even easier.

Iced Pumpkin Cookies

Very disappointing. They came out looking like scones, all lumpy and prickly. They tasted ok, but really flour-y, so not even that redeemed them. Admittedly I'm a bit of a beginner, but I followed the directions exactly and they just did not work out. I skipped the icing. They were too ugly/tasteless to save!

Quinoa with Chickpeas and Tomatoes

I loved this. It could have used some onion, but that's about all I would have changed. My quinoa took only about 7 or 8 minutes to cook, so this came together more quickly than I expected. Will definitely make this again.

Lentils And Spinach

Good. This takes a while and isn't a good option for us during the week, but it was nice to have something healthy and relatively easy to throw together. I doubled the lentils, so now I have leftovers for lunch tomorrow!
