Vegan Carrot Curry Soup
I love this soup! I caramelized an onion and added, saving some for garnish with homemade croutons. I used my immersion blender which makes life so much easier. I was very wary of the coconut milk and was pleasantly surprised. It added to the overall flavor of the soup but did not taste like coconut. I am making a double batch today, half for me and half for a neighbor that just had a baby. Can't wait for dinner! Thanks monsterclowngirl!

Chicken and Gnocchi Soup
This was a great and easy weeknight recipe. I served it with a salad and crusty bread and everyone really liked it. I didn't have any chicken so I subbed chicken sausage which the kids loved. I also chopped the spinach a bit per another reviewer and it made all the difference between my kids picking out the slimy chunks or just eating it without mentioning spinach at all. Genius...I will do this every time I add spinach to soup now. Plus it looked a lot prettier in the bowl. Because of dietary restrictions I used 2% Lactaid milk instead of the cream with excellent results. I added a bit of thyme, paprika and a dash of nutmeg as well, soups beg to be seasoned so I couldn't resist!

Oven Omelet
I made this for dinner tonight and it was good, not great. I added some sauteed garlic and onion and broccoli along with some seasonings but it was still a bit bland. The potatoes were mushy and I don't think they add a lot to the end result. Maybe I will make them into some crispy hash browns and serve them on the side next time. I will definitely make this again with some experimenting on ingredients and making it more flavorful.
