Panang Curry with Chicken

This was great! I used lime zest instead of kaffir lime leaves and added a teaspoon of natural peanutbutter to help thicken just a bit. Better than many Thai restaurants.

Mexican Bean Salad

Really tasty and fresh but I would recommend using less vinegar. I think it's overpowering here and there's already enough acidity from the citrus juice and peppers.

Mango Salsa

Amazing! I used cubanelle peppers instead of red bell pepper since they were what I had on hand. To tried to restore the sweetness of red peppers by adding a little pineapple as well. Did a great job balancing it out. Also, word of warning, use gloves when dicing jalapenos!

Authentic Enchiladas Verdes

The chicken filling was a little plain and needed something extra despite the fact that I added cumin and the salsa verde mixture. However, the salsa verde was amazing! I didn't add any chicken stock as it was already thin enough and I only added one serrano pepper since they have a lot of heat.

Chicken Marsala

Great Marsala recipe. I like to make dishes as healthy as possible so I made a few adjustments: 1. I grilled the chicken instead of pan frying and then added into mixture as it simmered to absorb some of the flavor. 2. I didn't add any butter, just extra virgin olive oil. 3. I also added some garlic to the mushroom mix for extra flavor. Served with whole wheat bow-tie pasta and asparagus. Chicken Marsala is my boyfriend's favorite and he loved this!
