Banana Crumb Muffins

I have several banana muffin recipes (love Giada's on the Food Network). These were outstanding-did take advice of reviewers (thanks!) and added a small amount of vanilla and cinnamon to the batter. Otherwise, made as written including using butter not oil as one reviewer insisted. The topping didn't burn as others experienced (maybe oven a little hot) and wasn't cloyingly sweet since there was only about 1T per muffin.

Quinoa and Black Beans

Very good. Others suggested adding only 1 can of beans, I agree! I did add a little bit of tomato sauce as it seemed to need it for some reason. Otherwise, VERY EASY, quick, tasty.

Perfect Ten Baked Cod

Wow! Had to make a few alterations due to lack of ingredients. I melted butter, dipped cod, then dipped in crackers mixed with seasoned pepper and lemon rind. Topped with shredded parmesan and baked at 400 for about 15 minutes. Outstanding!

Chocolate Chocolate Chip Cookies I

I'm eating them while still warm. Flavor is amazing-I did leave out the nuts as no one will eat them here but me. The cookies do fall apart while still warm (small price to pay) but I'm sure will be solid once they cool more. I did use 1/2 butter and 1/2 shortening as recommended and they didn't spread out as much which I think is a good idea.

Cream Filled Cupcakes

I saved this 4 years ago and finally tried the recipe now that Hostess is temporarily out of business. I wanted it to taste like one of theirs and while it was good, it was an average chocolate cupcake (not the dark chocolate they have) with a passable white icing. I used the chocolate glaze elsewhere in this site and it was excellent.

Satiny Chocolate Glaze

I used this for the cream filled cupcakes elsewhere on this site. It was outstanding and would make a great ice cream fudge topping as well! I microwaved as others suggested and added the vanilla at the end.

Baked Bar-be-que Chicken

I'd had something similar yesterday and wanted to try and replicate it-this was it. The chicken stays incredibly moist with this method. I did salt and pepper it first. I kept the cover on after the bbq sauce went on for about 15 minutes, then uncovered. I broiled it for about 2 minutes but may try longer next time to get the burnt marks of a grill.

Golden Rum Cake

Wow-great, EASY recipe! I omitted the nuts as I wasn't sure if everyone could eat them and used Coconut Rum for subtle flavor. I did cook the glaze with the rum for 1 minute so it didn't taste too much like alcohol. Everyone loved it!!

Simple Sloppy Joes

Really great. I used Worcester rather than soy and ground turkey rather than beef but otherwise as written-outstanding. If you haven't tried ground turkey as an alternative to beef, you'd be shocked (and I'm REALLY a big food lover so if I can do it, EVERYONE can!!)

Exquisite Pizza Sauce

Wow-won't bother buying pizza sauce ever again!! Could be a tad sweet until it was baked so don't judge to quickly! The spice mixture is wonderful though I didn't have anchovy paste-the only change. Thank you!!

Roasted Beets and Sauteed Beet Greens

Got some HUGE beets today and roasted them but then followed the recipe for the sauted beet greens. Great, easy, fast, nutritious. We did sprinkle a little goat cheese on the beets but not necessary. Thanks!!

Caramel Popcorn

Excellent. It said you needed 20 cups of popped corn though this was WAY too much as much of the popcorn remained uncovered w/ caramel. Minor problem easily corrected for such an AMAZING recipe!

Peanut Butter Bars I

Very good flavor. I followed recipe though I halved it so I didn't eat the whole thing. I did spread some more peanut butter on the crust before spreading w/ chocolate as some had noted a lack of pb flavor. Did get crumbly when removing from pan however.

I followed the pack and did the 1/2 cup less flour, 1/2 cup more corn meal. I think the vanilla makes it more cupcake-y than some may like. I would reduce it to 1/2 tsp. Very moist & delicious!

Wow-took some feedback and used 2 bananas and left out the apple. Tested a few w/ mini chocolate chips (and dried cherries and pecans-waiting to eat those.) Definitely better w/ the chocolate chips. Did add 1/2 tsp. vanilla and 1/2 tsp. baking powder. Outstanding!

Oatmeal Peanut Butter Cookies III

I wanted to love these based on the reviews. I found them way too large-definitely make oreo sized. But while I'm a huge peanut butter fan, the filling was too sweet and the recipe made too much for the cookies. The flavor was delicious but recipe needs tweaking.

Shortbread Cookies II

These are the best cookies ever in my humble opinion! I do dip some in chocolate because then it's real perfection. I also add 1/2 tsp of salt because salt makes everything better! Thank you Sally!!
