Caramelized Chicken Wings

This was delicious!! My husband and 4 kids (ages 11, 9, 7, and 3) and I all l.o.v.e.d. it! My husband was leery because he doesn't like "weird" food (peanut butter + soy sauce = weird in his book), but he ended up loving it!! It was so disappointing when it was gone! I used 12 drumsticks instead of wings because that's what I had. I made the sauce as written, just tripled it to make sure there was enough for the drumsticks (no sesame seeds on hand though). It was so very easy to do and the family's favorite meal in a long time! This will be on a regular rotation! It was *very* sticky, but worth it! We served it with Japanese noodles and sliced bell peppers. I'm going to try the sauce with shrimp or chicken over pasta or rice so we can eat it with a fork and it might be less messy. It was oh so good! Thanks for a fantastic recipe Shannon!

Busy Day Chicken

Yummy and Easy!! I was looking for something to put together fast and to use up boneless, skinless chicken breasts. I accidentally opened a bag of tenders instead, but they worked great! I put a little BBQ sauce on the bottom of the crockpot, then layers the tenders and more BBQ sauce. I used a 2.5 pound bag of chicken and 1.5 (18 oz) bottles of BBQ sauce. Then cooked it on low for 4 hours. It was a little overdone (esp. at the bottom), so I think next time I'll try only cooking it for 3 hours. Couldn't be easier and the kids loved it!

Herb, Garlic and Bacon Pork Loin

I made this for my family tonight, & my husband (who can be hard to please) loved it!! I also made some changes because of what I had on hand. I seared the pork loin first, used chicken bouillion instead of broth, dried herbs instead of fresh, garlic powder instead of cloves, and instead of pearl onions, I quartered some small yellow onions and threw in some quarted yukon potatoes also. The onions and potatoes turned out too soft - next time I'd throw them in later to not cook so much, but the flavor was great. I was concerned about the pork turning out dry & bland like I've had happen before with other recipes, but I didn't have time to marinate or brine it. I'm glad I tried this recipe! Altogether, it was very simple to make, very delicious and I'll be making it again!

Apple Crisp I

I followed the recipe as is except for subbing pecans for walnuts, and we did not care for this at all. The topping was very "flour-y", dry and bland, not very sweet. I made this for my husband and brother-in-law who both love apple crisp, and honestly it was the worst we've ever had. I've made tons of apple crisp before, and really hoped to like this recipe for something new. It's possible I messed something up, but apple crisp is pretty foolproof I think.

Slow Cooker Chicken with Mushroom Wine Sauce

We loved it. It was so easy to make and to tweak. We had company coming so to make a little more I added a can of cream of chicken to increase the sauce, subbed about 1/4 cup sliced green onions for the dried minced onion (because that's what I had), ommitted the milk (because we were out - and didn't want to open a can of evaporated for only 1 T.), and used 1.3 lbs. thawed chicken breast tenders, and 3 partially thawed chicken breasts. We served it over Jasmati rice and it was delicious!! It served 4 adults, 5 children (ages 2-6), and I had the leftovers for lunch today. Mmm, so good. I'll definitely be putting this in the recipe box.

Sour Cream Chicken

I forgot to mention, that I followed it exactly. I think the cream of mushroom soup would have been too mushroomy for *us*, but for those who like mushrooms more, that would probably be delicious too. We like them a little though, so I did add a 4 oz. can of mushrooms, and it added a nice texture.

Penne a la Vodka II

So Delicious!!! My (meat loving) husband thought this was fantastic, and had seconds or thirds. I got rave reviews from him which are few and far between. I will definitely be making this again (and again)!!! I used jarred minced garlic instead of fresh because that's what was on hand, and like other reviewers, I also used diced or crushed (I forget which one) canned tomatoes. I realized after I'd gotten started that the bottle in the cupboard I thought was vodka was actually rum. So I made a mad dash to the store and ended up letting the tomato mixture simmer for about 30 minutes instead of 15. It was a quite thick because of that, but still turned out deliciously!! The smell while it was cooking was so good! And the leftovers were really great also. Definitely a keeper!

Butternut Squash Casserole

I loved this recipe! It's hard to believe a squash can be so good. What a great way to get kids (and husbands) to eat squash! The three changes I made were to use 3/4 c. white sugar instead of 1 cup, I added a sprinkle of cinnamon, and I used Honey Bunches of Oats with almonds instead of the vanilla wafers (like another reviewer, that's what I had). Some of the topping was a little chewy or soggy the next day (I think I might have preferred the wafers), but still D-E-licious. I'll have to try the vanilla wafers next time, because I will be making this again (and again, and again...)

Garlic-Lemon Double Stuffed Chicken

This was amazing!!! The flavors were fantastic, and it's very versatile. I couldn't get enough of it. My husband said there was too much cream cheese, so I would probably decrease that a little next time. I shared the recipe with my sister who made it for her husband and in-laws and they all loved it. She said they had a silent meal for a while - everyone was too busy eating to talk! It has a gourmet kind of taste without a lot of fancy work. My sister used scissors to cut the breasts in half and said that it worked very well. Absolutely a new favorite!

Sour Cream Noodle Bake

My family loved this recipe! the kids had seconds (and thirds), and my husband said it was a hit with everyone (including him - which doesn't happen often!). We didn't have egg noodles, so I substituted elbow/macaroni noodles. I wasn't sure what "creamed cottage cheese" was, so I just used it as is. I also used 12 oz. instead of 1 cup. And I forgot to put in the onion. It was delicious and easy. We'll definitely use this recipe again and again! Oh, I was also out of shredded cheese, so I put slices of american on top.
