Banana Crunch Cake

This is spectacular! I took some advice from other posts and added 50% more banana. I also used half shortening, half butter in the cake. It was moist, caramel-y, crunchy and delicious. It would be a terrific coffee cake, too.

Broccoli Chicken Fettuccini Alfredo

I lightened this up by using half the pasta (vermicelli) and nearly tripling the chopped broccoli. I also took others' advice and threw a big garlic clove in with the chicken. It came out super creamy and delicious. My kids inhaled it. A keeper!

Cowboy Oatmeal Cookies

I've used shortening, butter, and/or margarine in cookies, but never oil. Maybe that's why these turned out to be DELICIOUS!

Orange Chicken

OK--so I stole this tip from Rachael Ray... it occurred to me that the complaints could be because the flour didn't have a chance to cook. I sprinkled the flour over the chicken drippings and let it rest for a minute, then stirred in the chicken stock. After it thickened a bit, I stirred in the marmalade and lemon juice. It turned out to be pretty tasty!

Swiss Cheesy Cauliflower

If it's too bland, throw some dry mustard in with the flour at the beginning and sprinkle some paprika on top after baking. My kids ate this, so it automatically gets a higer mark from me.

Zucchini and Tomato Casserole

This could be a good South Beach side dish if you substitute olive oil for the butter! I'm not sure I like the parmesan/dill combination... but cheddar could work, or maybe another herb.

Mini Eggplant Pizzettes

No, it's not pizza. HOWEVER... anyone who is doing South Beach knows that you can get very bored very quickly, and this was a nice change from salad w/ vinegar and oil and chicken! It actually reminded me more of eggplant parm. than pizza. Next time, I'll either 1) add oregano to up the pizza flavor, or 2) add parmesan cheese. (Maybe both?)

Tomato Alfredo

This was pretty good--I changed the following: -used Italian-style diced tomatoes -used 1 (whole) bag frozen Italian-style vegetables instead of peas to pump up the vitamins -added 1 can of tomato sauce -added a pinch of crushed red pepper Kids ages 6 and 8 really liked it!

I really goofed... to make a long story short, I ended up with double the sugar in the filling. I just eased up on the sprinkles at the end. No complaints--this reminded me of trips to Pella, Iowa and to my (very) Dutch grandma's house. Amazing.
