Delicious Ham and Potato Soup

This was amazing! The only changes I made were to add a bay leaf (I have a bay tree so bay goes into nearly everything), used Better Than Bouillon Chicken Base (what I had on hand), and added about a cup of shredded cheddar toward the end. DH said it was the best soup that I ever made. This would have been awesome even without the small changes. Will definitely be making this again!

Shelby's Microwave Meat Loaf

This meatloaf was great! I never would have even considered a microwave meatloaf, except for the fact that my oven is on the fritz, and it's so hot here that I wouldn't want to use the oven, even if it was working. I've tried many of the top-rated meatloaf recipes here, and this one is the best! Turns out much more moist than all the others I've done in the oven. DH loved it, too! Thanks Shelby, it's a keeper!

Peachy Bread Pudding with Caramel Sauce

I made this with mangoes instead of peaches, b/c I had a couple of really ripe ones begging to be used. OMG! This was sooooo good! The only thing that I'd do differently is to maybe double the recipe. Here in New Orleans we are used to very thick/deep bread pudding and this one turned out really thin when baked in a 9" x 13" dish. However, our french bread is very different here (much lighter), so I'm gonna experiment with the proportions due to our local bread. The caramel sauce is awesome! I did, however, use 2 TBSP rum, since down here we like to taste our alcohol ;) Tonight I took this dessert to dinner with the neighbors and it was a big hit! Thanks jowolf2!

Savory Crab Stuffed Mushrooms

Excellent! Didn't have Mont. Jack cheese on hand, so subbed with shaved parmesan, b/c that's what I did have. If it's available in your area, do use fresh white backfin lump crabmeat. You will need to pick it for shell particles, but it's well worth the effort! Very tasty!

Chicken Marsala

This was delicious and very easy! I used 2 chicken breasts, an 8 oz. package of sliced mushrooms and served it over angel hair pasta. DH loved it and he's not normally a big fan of chicken! I usually cook with dry marsala, but since this also included dry sherry, I used sweet marsala and it turned out just right. Don't even think about using cooking sherry - it's just plain nasty! The only thing that I will do differently next time is to increase the spices a little in the flour mixture, due to personal preference. Thanks, Lisa! This one is definitely a keeper!

Baked Omelet Roll

Excellent and so easy! I cut the recipe in half and baked in an 11" x 7" pyrex baking dish for 10 minutes, then topped it with cheese, ham, and broiled just a minute, until the cheese started to melt. No problems rolling it up, because I sprayed the dish with PAM before I poured in the egg mixture. The texture is great, but you MUST do this in a blender to get it right. Whisking the ingredients in a bowl will not work, so don't even try it! Thanks Lori - this is a keeper!

Oaxacan Tacos

I made these for dinner tonight and they are awesome! Very simple, easy, tasty, and very authentic. My former neighbors had a housekeeper from Central America and these are very much like the tacos she made for us, except she made the corn tortillas by hand, without a press even! Do try to get the highest quality top sirloin that you can find - it does make a difference. I recommend Whole Foods Market all-natural beef, if you have a store in your area. They are a little more expensive but it is worth it for the taste and tenderness. Also, if you don't like hot food, remove all the seeds and veins from the peppers before you chop them. That's where most of the heat comes from. The only thing that I did differently was, like another reviewer, I marinated the sliced steak with a little fresh squeezed lime, salt, and pepper for about 10 or 15 minutes (just long enough to have a Corona) before I seared it, then added a little more salt and pepper after cooking. Also coated my cast iron skillet with a tiny amount of oil, just enough to prevent sticking. Lola, thanks so much for sharing this!!!

Neat Sloppy Joes

Made this for the first time tonight and hub and I agreed that these were the best sloppy joes we've ever had! Normally, I will make a recipe exactly as written the first time then start changing it the next, but there is nothing I would change with this one. I do recommend adding a slice of american cheese to the sandwich, though. This is comfort food at its best!
