Roasted Pork Loin

I thought that this was okay... The rosemary provided some flavor but I didn't feel that there was enough flavor to want to go back for seconds.

Huckleberry-Lemon Scones

This is a great spring or summer-time treat. I used blueberries instead of huckleberries. The only comment I have to make is that these were very tart/lemony - make sure to measure exactly or use a little bit less than the recipe calls for.

Quick and Easy Taco Dip

I modified this a bit based on a similar dip that I had recently. I used all of the ingredients listed on the recipe but added 8 oz of sour cream as well. Because of that, I doubled the salsa and the taco seasoning. This was a huge hit and everyone loved it! I will certainly make this again.

Holiday Chicken Salad

Yum! With so many reviews I doubt mine will ever be read, but I followed the recipe almost exactly as written and it turned out wonderfully. The only changes I made were because I didn't have the prescribed ingredients - I substituted walnuts and dried cherries and both taste great!

Baked Lemon Chicken with Mushroom Sauce

As the recipe stands, I wouldn't give it more than 3 stars. With some modification it's certainly a 4 or 5 star recipe. I added garlic, salt and pepper to mine. As the original author noted in her comments, I floured my chicken breasts and then pan seared, then finished cooking at a low temperature in the oven. The sauce was really flavorful.

Downeast Maine Pumpkin Bread

Yum! This pumpkin bread turned out really well - perhaps not quite as moist as I would have preferred, but I don't have a complaint about it being dry. I used this recipe for one 5x9" loaf of bread (cooking time was about 60-65 minutes) + 11 muffins (cooking time was about 20 minutes) and both turned out wonderfully.

Hawaiian Chicken Kabobs

Hmm. I decided to bake this, as it decided to rain at dinner time. I will try this again and grill it, but don't bake this!!! It turns out like paste. I will give it another shot, though, and hopefully have the same success as everyone else.

Four Cheese Ravioli with Artichoke Hearts, Olives and Pesto

This recipe was very easy and quick to make. I used the Buioni vodka sauce instead, and it turned out great! The artichokes add a really dynamic flavor and texture.

Grandmother's Buttermilk Cornbread

This is one of the best things I have ever eaten. The cornbread is so moist and delicious - I could not believe how good this was. I followed the recipe exactly as written - the method of incorporating the hot, melted butter with the sugar and eggs was not something I was used to for making cornbread, but it worked perfectly and my eggs thankfully did not scramble. My cooking time in an 8x8" pan was 30 minutes exactly.

Hearty Vegetable Lasagna

I loved this basic lagagna recipe! I did make a couple of my own changes - I added some additional veggies (just carrots, celery, red pepper) and I reduced the cheese (cut mozzarella in half, used 10 oz of ricotta) and it turned out wonderful! My husband and I very much enjoy meat and we found that the heartiness of the veggies in here were enough for us.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

This was a fun recipe to try! I made it by following the recipe - the only alteration I made was that I chopped up some of the hot dogs and scattered them throughout the batter - I also used full-size muffin tins. The dipping sauce was a great addition too!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I REALLY enjoyed this! We even had seconds, which is a rarity in my house. The flavors that the Boursin cheese adds to the dish is just wonderful. When I made the dish I had just run out of mushrooms - if I enjoy it so much without the mushrooms, I can only imagine how much better it would be with the addition of the mushrooms. Thanks for sharing this recipe, I would have never thought to use Boursin in a cream sauce.

Deep Fried Cheese Curds

I'm happy to have found a great base recipe for cheese curds, as a homegrown Minnesotan now living in Seattle (where people haven't even heard of cheese curds!). I used garlic & herb cheese curds from the famous Beecher's Cheese at the Pike Place Market (they were out of plain). I followed many recommendations of the reviewers. I used 3/4 cup of beer instead of milk and drained off all of the excess batter before frying. Per recommendations I maintained an oil temperature of 375 which seemed to work perfectly! Also, I fried the curds at room temperature. Thanks for all of the reviews. These turned out light, fluffy and very crispy - just like at the MN State Fair!
