Holiday Chicken Salad

Yum! With so many reviews I doubt mine will ever be read, but I followed the recipe almost exactly as written and it turned out wonderfully. The only changes I made were because I didn't have the prescribed ingredients - I substituted walnuts and dried cherries and both taste great!

Hawaiian Chicken Kabobs

Hmm. I decided to bake this, as it decided to rain at dinner time. I will try this again and grill it, but don't bake this!!! It turns out like paste. I will give it another shot, though, and hopefully have the same success as everyone else.

Caramelized Brussels Sprouts with Pistachios

Yum! Now this is the way to eat Brussels sprouts! I made the dish just as the recipe suggested and it turned out beautifully. So beautifully that I even made it again the next day. If you are serving Brussels sprouts for people you aren't sure will like the vegetable, this is a great dish to entice them.

Baked Ziti II

Meh - this was ok. I guess I didn't enjoy as much as everyone else. Don't get me wrong, it was just fine. I thought that the amount of ricotta in this dish was a bit much. It was extremely creamy, but perhaps could be reduced.

Mongolian Beef and Spring Onions

I LOVED this dish - perhaps even a new favorite. The flavor was divine. The brown sugar made the flavor very sweet, but then the ginger and soy sauce added a new Asian dimension. Absolutely delicious. The only thing I changed was that I cooked everything in the same pan. When the sauce was through cooking I transferred it to a bowl and then just fried up the beef in the same pan and added the liquid back into it at the end. I paired this with Restaurant Quality Fried Rice from this site.

Fried Rice Restaurant Style

I really enjoyed this dish. I paired it with Mongolian Beef (from this site). The recipe is very simple and it tastes great - who knew fried rice was so easy? The only change I made was to fry/sautee the carrots and peas for a few minutes and then added the egg and rice to the pain. Always looking for as few dishes as possible.

Charleston Breakfast Casserole

I don't know why it took me so long to make this breakfast, but boy is it good! Per the suggestions of other reviewers and the author, I used this recipe as a baseline and really made my own changes along the way. Instead of using bacon, I browned one pound of maple sausage; I added mushrooms and onions and sauteed them with the peppers. Instead of croutons, I used 3 cups of crusty cubed bread. Also, I more than doubled the number of eggs - I used about 14 or 15 eggs. I didn't feel like 6 eggs was going to be enough to give the dish the egg substance it needed. I made this for a group of friends and everyone raved about it! I would certainly recommend and make again.

As the recipe stands, I wouldn't give it more than 3 stars. With some modification it's certainly a 4 or 5 star recipe. I added garlic, salt and pepper to mine. As the original author noted in her comments, I floured my chicken breasts and then pan seared, then finished cooking at a low temperature in the oven. The sauce was really flavorful.

Penne with Chicken and Asparagus

This is a great start to a delicious recipe. As the recipe currently stands, it needs a bit of adjusting, in my opinion. It's good, but not great. I added mushrooms to mine but it still needs something more in terms of offering more flavor. Next time I will add artichoke hearts and thyme and probably some more garlic.

Quick and Easy Taco Dip

I modified this a bit based on a similar dip that I had recently. I used all of the ingredients listed on the recipe but added 8 oz of sour cream as well. Because of that, I doubled the salsa and the taco seasoning. This was a huge hit and everyone loved it! I will certainly make this again.

Mom's Best Pot Roast

This is a great base for a pot roast recipe. I like to switch up what vegetables I include, but typically start with potatoes, carrots and onions. The left over liquid makes a great gravy for the potatoes and meat.

Amish Breakfast Casserole

I did not care for this as much as everyone else seemed to. I didn't use frozen hashbrowns - I used potatoes that I grated and that was the thing I did not like about this casserole. If anyone plans to use fresh potatoes instead of frozen, I would advise frying them a bit - the texture is just kind of gross in the casserole. Otherwise, I followed the recipe exactly and the flavor was great. Next time I will either try with frozen hashbrowns or cook the fresh potatoes a bit in a frying pan.

Chicken Noodle Casserole

I made this for dinner last night and really enjoyed it. I did follow the recipe pretty closely and it turned out very well. I would definitely make it again but would consider adding some additional seasonings to enhance the flavor. Great recipe - and I must say that I love that it doesn't include a can of soup!

Anniversary Chicken I

This is great! I am always looking for a new way to prepare chicken and this will be one I will come back to again. The flavor that the ranch and teriyaki creates is great - one I would have never come up with on my own. I did follow this recipe exactly how it was written, except I used real bacon that I cooked on the stove instead of bacon bits. I would definitely recommend this!
