Caramel Apple Pork Chops

Wonderful! I have always enjoyed apple pork chops and this is a winning recipe. I made this exactly as directed in the recipe, however, I added about 1/2 cup of chicken stock to the apple/brown sugar mixture once in the skillet. This made for a more substantial sauce. I let the chicken stock reduce for about 5 minutes and had a wonderful, flavorful sauce.

Marinated Pork Tenderloin

I enjoyed this marinade. I made the marinade exactly as the recipe calls for, except I baked the pork in the oven instead of grilling it. I baked it at 350 for about 35ish minutes (I had a probe thermometer) and it was quite tasty. The cinnamon was a bit over powering, so I'd probably reduce that a bit; however, I can see it tasting a little differently on the grill.

Avocado Feta Salsa

Yum!! This is a really great enhanced guacamole with a lot of awesome flavors. I served it at a party and it doesn't look as appetizing as guacamole does, so I'd recommend serving it only at a smaller gathering or putting a note telling what it is to entice people.

Asian Beef with Snow Peas

Great recipe! I made just as written, except I substituted broccoli for the snow peas and I used flank steak. I really enjoyed the flavor of the sauce but would probably double it next time or maybe add some beef broth just to make the sauce go a little further. This was very easy to make.

Grandmother's Buttermilk Cornbread

This is one of the best things I have ever eaten. The cornbread is so moist and delicious - I could not believe how good this was. I followed the recipe exactly as written - the method of incorporating the hot, melted butter with the sugar and eggs was not something I was used to for making cornbread, but it worked perfectly and my eggs thankfully did not scramble. My cooking time in an 8x8" pan was 30 minutes exactly.

Japanese Beef Stir-Fry

I really enjoyed this recipe. The sauce was flavorful and easy to make and it incorporated a ton of great healthy vegetables. The recipe is extremely versatile to allow for adding whatever you've got in your veggie drawer.

The Southwestern Bagel Thins

A great way to spice up a generic breakfast sandwich. My husband really likes southwest flavors so this was a great way to change it up for him. I used fresh red peppers instead of canned roasted, and my avocado wasn't quite ripe yet, so I omitted it. Otherwise, it's very easy to make and offers a lot of early morning flavor.

I'm having a hard time rating this - I really liked the flavor and want to like this as a whole, but the texture of the carrots really didn't do it for me. If you're okay with grainy textures, the flavor is fabulous.

Hearty Vegetable Lasagna

I loved this basic lagagna recipe! I did make a couple of my own changes - I added some additional veggies (just carrots, celery, red pepper) and I reduced the cheese (cut mozzarella in half, used 10 oz of ricotta) and it turned out wonderful! My husband and I very much enjoy meat and we found that the heartiness of the veggies in here were enough for us.

Chicken Honey Nut Stir Fry

I really liked this, but didn't love it. It's very flavorful but I think a little bit too sweet for me. Next time I'll try to cut the OJ in half and substitute the other half with chicken stock and see if that cuts out on the sweetness. Otherwise, this was so easy to make and it really did taste great. I made it with white rice - the sauce from the chicken tasted great with the rice.

Greek Orzo Salad

Wonderful salad! I served this alongside Lamb Chops with Balsalmic Reduction (on this site) and it was a fabulous Mediterranean meal. There were several people who commented that this salad lacked flavor - I did not have that complaint whatsoever. The flavor from the marinade and all of the ingredients was light and perfect, in my opinion. I did add a bit of salt to mine as well.

Sherry Apple Pork Chops

This was a fabulous upgrade from other apple pork chop recipes I've tried in the past. I followed the recipe almost as instructed, but instead of baking it pan fried the pork chops and then made the sauce in the same pan until it thickened a bit. Delicious!
