Pork Tenderloin with Creamy Herb Sauce

This is one of those recipes where when you start making it, you think to yourself "what the heck am i making" ...but then it turns out great! I made this with regular boneless pork chops, and it gets a thumbs up. I forgot to grab carrots at the store, but it didn't seem like i was missing anything. Served over wild rice and with steamed broccoli. It was a nice change of pace from the normal breaded pork chops i usually make.

Italian Breaded Pork Chops

This recipe reminded me of being a kid and making breaded chicken with my mother. It was just as good on the pork chops. I didn't quite get the use of browning the garlic and then removing it from the pan, so i would probably skip that next time. I double breaded, and also drizzled a little bit of melted butter over the chops before putting them in the oven. Absolutely delicious!

Honey Grilled Shrimp

I made this for father's day to go with steaks, and it was superb. I followed the recipe to a tee, and the flavors were great. It wasn't too overpowering -- maybe next time I would use fresh garlic instead of the powder, but I think this recipe is great as is and will definitely be making this again this summer!

Key West Chicken

I didn't think this was very key west-y ...but I would try it again. I only marinated mine for about 2 hours, so next time i would try overnight and possibly double the marinade.

Tomato Gorgonzola Soup

This soup was delicious. Very rich, but oh so good. I first served it without blending it and it was fine, but was left wishing that I did blend it. Before packing up the leftovers (made a double batch for a pre-mother's day dinner), I used an immersion blender and it was much better with the smoother texture. I used half and half and reduced fat cream cheese, and then served with some parmesan crisps from trader joe's. Can't wait to finish the rest!

Rosemary Chicken with Orange-Maple Glaze

This recipe had great flavors, but I was disappointed with the glaze. I felt like i kept it on the stove forever and it just wasnt thickening. I got so anxious to eat it that i pulled it off the stove before it got glaze-like. Still good, but next time will add some cornstarch or flour to help the process along.

Red River Beef Stroganoff

This was a solid dinner, great when you really need some comfort food! I basically cut the amount of butter in half -- there is no way you need all that in the recipe!

Szechwan Shrimp

I probably would have given this 5 stars, had I not been such a wuss when it came to the spice! The flavors of the sauce were awesome, it was just a bit too spicy for my taste. Meaning, my mouth was on fire! I was looking for something different than your typical teriyaki stir fry, and this was the perfect solution. But next time (there will be a next time), i will only use a pinch of the red pepper. I used 16 oz of shrimp, tossed in a bag of frozen stir fry veggies (lazy, I know), and doubled the sauce. It was a perfect amount for myself and my hungry boyfriend, and there were leftovers for him to take for lunch today.

Meatball Sandwich

An excellent and simple recipe. Next time I will make smaller meatballs. I bought whole wheat baguette rolls and the meatballs were a little too big which made the sandwich hard to eat. But overall, the meatballs were tender, moist and well-seasoned. The sandwiches are definitely better if you spoon some extra sauce onto them! As a personal preference, I used sliced mozzarella instead of provolone. This is definitely a keeper!

Awesome Crab Soup

This recipe was just like the name -- it was awesome! I took the advice of other reviewers and omitted the gravy. It was still fantastic! I love the wine flavor behind it -- i only used 3/4 cup of wine, but was left wishing i used the entire cup. I also didnt add any additional salt, and didnt use the hot sauce -- I am not a big fan of spicy, and I think the spice from the black pepper was plenty. This is a definite keeper and I am looking forward to the leftovers today!

Grilled Rib Eye Steaks

This is an awesome marinade -- I didn't change a thing, and it was fantastic! I marinated overnight and served with a green salad and baked sweet potatoes. Perfection!

Goat Cheese and Spinach Turkey Burgers

I made these tonight, and my boyfriend said he never wants to eat beef burgers again. I followed other recommendations and added a few things -- a splash of worchestire, an egg, 1/4 cup of breadcrumbs, and i also added some montreal steak seasoning. I served them with simple oven fries from this site -- it was a huge hit!

Italian Grilled Cheese Sandwiches

What a great change to regular grilled cheese! Instead of doing the garlic/butter mixture, I used thinly sliced texas toast (lite) and sprinkled italian seasoning over the cheese. I baked them, and then to finish it off i sprinkled parmesan on top just as they came out of the oven. Wonderful!

Baked Ziti I

As a a recent college grad who is slowly learning to cook without Hamburger Helper, I was a little nervous to cook something like this. It turned out so great that I even took a picture of it to send to my mom and sister, my cooking mentors. It was easy to prepare and delicious, and enough so that my roommate and I have lunch and dinner for the next week.
