Lemon Zucchini Bread

I took the advice of naples34102 and used a full tbsp of zest and made her glaze for the top. This was outstanding! Plenty sweet for me. There's so much flavor from the lemon, but not too much and not bitter at all. I highly recommend this recipe with the glaze!

Tasted good but they didn't stay closed during baking. Way too ugly to share outside of immediate family. Maybe a larger cookie cutter than the recommended 2 inch circle would help.

Curried Zucchini Soup

This is a nice, light summer soup. I would make this in the winter but use 1/2 the water to bulk it up a bit. Next time: 1 tbsp oil 1 onion 3 tbsp curry powder 10 small yellow squash 7 cups water 2 tbsp bouillon

Tangy Honey Glazed Ham

Sweet and savory...Yum! I studded the ham with cloves and pineapple, so left the ground cloves out of the glaze. Will definitely ue this again!

Fluffy Pancakes

The first batch I made I followed the recipe exactly. The pancakes were nice and fluffy. There is NO vinegar taste! The vinegar in this recipe only serves to interact with the leavenings to make the pancakes rise. The second round, I doubled the recipe and added 1 tbsp vanilla. The pancakes were still good but on the thin side. So maybe reduce the milk if you're making a double batch.

Butternut Squash Soup

I'm a huge fan of butternut squash soup and had never tried one with cream cheese. I LOVE cream cheese and was really excited about this recipe. It was just ok..not worth the extra calories imo. Oddly bland. I agree with other reviewers re: tweaks (roast squash, throw in a pear or apple, use half the cream cheese, alter spices, etc.) Before you add the cream cheese, puree it and get yourself a cupful..swirl in a spoonful of plain yogurt. It add awesome depth and creaminess.

Crustless Cheese Quiche

I usually make the Quick Italian Spinach Pie that's posted on Kraft's site but I thought I'd try this one. I was curious to see what the crust would be like. The crust was soggy and doughy. I'll stick with my other recipe which is just as easy, alot healthier and really tasty.

Curried Tofu Salad

Oh this is so good! A great recipe for tofu. I added some diced zucchini and celery and subbed grapes for the dates (what I had on hand). In the future I'm going to try using less soy sauce and mayo, maybe try subbing plain yogurt for the mayo. Healthy, yummy, easy!

Chicken Zucchini Casserole

I was really skeptical about this one, no one here likes the usual casseroles made with instant stuffing mix and/or canned cream soups. I saw the comments saying the stuffing mix flavor overwhelmed. But I have 2 packages of stovetop in my cabinet that someone brought for some holiday and I am bound and determined to use up lol. So I tweaked..used only 2 tbs butter and 1/2 c milk for stuffing. Used cream of celery soup. Added extra veggies to counteract the "overwhelming stuffing flavor" complaints...fresh green beans, peas, red bell pepper, corn, mushrooms...topped with cheddar cheese. Everyone ate it, even my bf who I fully expected to have to cook a second meal for. When I nuked the leftovers at work everyone came to see what was cooking and if I was gonna share! It was great and I would def make again..not too often though fat and sodium prob through the roof on this one!

Too Much Chocolate Cake

I made this in a 9x13 pan and I left out the choc chips (didn't have any on hand) and subbed 1/2 cup of coffee for the water. WOW This was so moist and rich...I made it 4 days ago and it sat loosely covered with foil on top of my microwave. Ate the last piece today and it was still awesome. Didn't even frost it!!! as my sweets LOVING bf said it didn't need it...

Super Spicy Pea Salad

Yum! I used frozen peas, thawed. I needed low fat so I left out the cheese and egg and used only 1 Tbs. of mayo with 2 Tbs. of plain yogurt, seasoned with a little Old Bay. Threw in a can of tuna too.

Buttery Lemon Spinach

I changed this recipe alot but I'm giving it 5 stars based on the basic flavor combo. I loved it. Light and easy. I sauteed the spinach with some parboiled thin sliced red potatoes. Used the lemon, butter and garlic and topped with parmesan. Awesome with Easy Garlic Broiled Chicken from this site.

Based on others reviews I cut way back on the butter and used less soy. I also used thin sliced chicken cutlets since ppl complained about the marinade not giving the chicken much flavor. I think this really helped, my chicken was very tasty. I baked it at 375 about 10 mins. I don't like broiled garlic it tastes really bitter to me. This was fast and easy and that's always a plus after working a 10 hour shift. Nice to have an easy go to recipe that's healthy and tastes great.

Grilled Chicken Burgers

This recipe has potential but as written it's unusable. The people that have had success with this as written must be using ground chicken breast or ground turkey . Ground chicken is very soft and it takes 4 times the amount of bread crumbs to come close to anything workable. I played around with this alot and wound up baking it as a loaf. It wound up just ok. The amount of binder you need to add to the chicken really detracts from the overall taste. But I really liked the flavors and will play with it some more.
