Best Tuna Casserole

This was really good! I was just making this for myself, so I made the following changes bases on serving size and ingredients on hand: I used 1 of the small cans of tuna (3oz.), 3/4 can of cream of Chicken(had no mushroom), about 2 cups noodles cooked, and I eyeballed the cheese- about 1 big handfull.. I skipped the veggies, and replaced the onion AND chips with French's French fried onions. That was a great substitution that gave some crunch and flavor, without the overpowering of uncooked onions. Baked it in a small corning ware dish 15 mins, it was wonderful!

Glazed Ham

This was soooo good! I also had a small fully cooked boneless ham. I cooked in in my crockpot for 4 hrs on high. There was just over 2 cups of water/drippings in the pot, so I took it all, doubled the other ingredients and put it all back in. I then cooked it on low for about 1 1/2 hrs longer. This was the most tender (falling apart) ham I have ever had, and with a wonderful flavor! Yum!

Hobo's Delight

I found this recipe when I needed to make dinner in a pinch and only had ground beef and potatoes.. I added Worcestershire sauce, plenty of parsley, and some parmesan cheese to my meat mixture. I put a scoop of cream of chicken on each burger patty, and a teaspoon of butter on top of the onion. This made it stay very moist and made a fantastic gravy! I baked at 350 for 25 mins like another reviewer, and they weren't quite done so I turned it up to 375 for another 10 mins. Even my super picky husband loved it!

Green Bean Stir-Fry

These were so simple & soooo good! The only thing I change, is to add the chopped garlic to the pan about a minute before the green beans are done. I think it's a little better when the garlic isn't raw. :)

Amazingly Easy Irish Soda Bread

The only thing I did differently was to halve the recipe.. The taste of the bread is good, but it is really dense and a bit dry. Maybe I baked it too long or mis-measured something. But overall, I liked it and I can get past the dryness if I heat it and spread butter over it!

Slow Cooker Turkey Breast

I ended up adding pretty much all but the kitchen sink for seasonings... Including a packet of mushroom gravy mix- which was the icing on the cake! What a great idea for another easy slow cooker day.

Fast Chicken Soup Base

This was a great and easy Base for chicken noodle soup. All you need to do is add noodles, some salt & pepper, and you're done! I made this with the leftovers from a roast chicken and scaled it down for 4 people. Yum!

Mexican Lasagna II

This was soo good! With the refried beans I omitted the green onions and tomatoes and just added some salsa and sauteed onions/garlic. For a little spice I put in a dash or 2 of Tabasco, but the salsa really added enough spice. I used a 3 cheese mexican blend cheese, as well as adding some mozzarella just because I wanted more cheese! This was great reheated in the microwave for a few day after as well! LOVE the texture of the tortillas after cooking!

I made this recipe for a Thanksgiving recipe 2 years ago, and have made it for every special occasion since! Everyone raves and requests the recipe! And this one recipe makes a lot!! I usually make 3 or 4 good size cheese balls with this and give them to the people I REALLY like!

Best Steak Marinade in Existence

This was super easy! Made the marinade quickly before work and threw it & 2 tenderloin steaks in a ziploc. Then grilled them on the george foreman when I got home. This is the 1st time my husband actually liked at home steak! 5 stars for that! Delish.

Baked Parmesan-Crusted Chicken

I thought this was pretty bland. I could taste herbs, no one in particular, and no other flavors.... Maybe I did something wrong, but I did give it 3 stars because it turned out moist and tender- and gave me a good idea of dipping my chicken in garlic butter before coating- instead of egg all the time. Thank you.

Sirloin Steak with Garlic Butter

I didn't see the big deal about this one. The butter mixture was great, but the steak just did not have enough flavor. Next time maybe I'll try doubling the sauce and baste during cooking...

Scotto Cheese Lasagna

This is a really good and easy base recipe. I add diced, cooked onions & garlic, as well as cooked ground beef to the sauce. I also mix in parmesan, and all of my italian herbs & spices with the ricotta mixture. Delicious!
