Zucchini 'Noodles'

Yummy idea! It got me looking up all kinds of zucchini pasta ideas and recipes. I omitted the last step, just drained it well and served it with marinara sauce. It was fantastic.(Marinara sauce: sautéed onions with barest spray of oil, then added a can of whole tomatoes to the pan, a lot of basil, a bit of oregano, salt and pepper to taste and a couple tbsp of splenda, simmered till it was thick in consistency) For cheese, my bf used some parmesan and I used some low fat mozzarella. Very yummy, very low calorie!

Sugarless Fruitcake

I made this as a healthy recipe for a family gathering and everyone enjoyed it quite a bit. However the first time I made it, it came out slightly dry so I doubled the amount of pineapple the second time and reduced mace to at least half. Also, I used whole wheat flour and my little cousin who is a year old had a blast eating it!

Strawberry Oat Muffins

Wonderful recipe! I added a 1/4C applesauce for half the oil, used egg whites only and whole wheat flour and finally added 1/4 to 1/2 tsp cinnamon. In one batch I added a bit more than a cup of freshly cut strawberries and in the other blueberries. Both came out wonderfully flavorful. These are yummy and super healthy and pass wonderfully for comfort food so my family loves them! If you are looking for something healthy AND tasty then this is it but if you want a more pastry-like fluffy muffin to indulge your sweet tooth, then you might not like these. A useful hint is not to use the really juicy strawberries because they will turn to mush and make the muffins too wet.

Quinoa and Black Beans

So yummy and wonderful texture! I might reduce the cilantro a bit (boyfriend is not a fan of it generally) and I might increase the cumin a tad next time I make it but even as is, it's so so good. I used only one 19 oz can of black beans and I felt it was enough and I used red quinoa which tastes the same as the normal kind but looks pretty in case you feel like a change.

Hamburger Soup I

I am a vegetarian but I made this for a friend of mine that was sick and a few friends and everyone loved ii! I sauteed the onion and a couple of cloves of garlic before adding the beef to it and then added a splash of lemon juice to the mixture. I also used low sodium low fat beef broth and added green beans, about two potatoes and a cup of pasta. I will definitely be making it for friends again! Thanks!

Bean Soup With Kale

This soup is super yummy. I made a couple of changes. I did drain the beans and skipped the italian seasoning the second time I made it and replaced that with a bit (1/3 C) of chopped anise (the veggie not the spice). So so good!

Butternut Squash Soup

YUM! I tweaked it a tad using oregano and basil because that's what I had and the blizzard outside didn't look too inviting for a trip to the market. I roasted the squash and roasted 7 or 8 cloves of garlic with it and added it all in. Also, I substituted chicken stock for water since I am vegetarian. I used one cream cheese, fat free and I sautéed the onions with the barest spray of oil and let them soften with low heat and their own moisture. So very good and creamy and calorie friendly! Thanks for the recipe!
