Shrimp Verde

This had a nice, clean flavor and is an easy week-night meal. I added 1/2 tsp of red pepper flakes and next time might trade feta for the pamesan.

Sassy Chicken Enchilada Dip

Rave reviews at work pot luck! I used 2 (9.5oz) cans of chicken breast meat, drained, a couple of tablespoons of chopped cilantro. I also added a 7oz can of whole green chilis, drained and chopped. I let it chill overnight - it definitely needs some time to let the flavors meld together.

A Nice Slow-Cooked Pork

Excellent and easy pork roast. Like others, I used frozen pearl onions, halved the broth, added baby carrots, and cooked the potatoes separately b/c there wasn't enough room in the pot.

Simply Divine Meat Loaf with Spinach

I gave this 3 stars because my husband loved it, but I thought it was a bit over-flavored. I cooked it exactly per the recipe, so next time I may take others' suggestion and use only half the onion soup packet or sub the Italian breadcrumbs with plain oatmeal.

Salmon Fillets with Creamy Dill

Excellent recipe - but the sauce could definitely be halved, and next time I'll try it with yogurt as others have suggested for a little lower cal/fat option. Great recipe, though, and I'm excited to try the spread recipe on chicken!

Golden Potato Soup

My husband loved this recipe! I took another reviewer's advice and sauteed the onions and celery in a little butter (also added a couple of cloves of minced garlic) before adding them to the potatoes and seasoning. I had to add a little more water before the potatoes got soft enough but I probably just didn't cut them in small enough cubes. I also used heavy cream instead of milk - made it extra creamy! Very hearty soup for a cold winter night!

Salmon in Lemon-Dill Sauce

This is a great recipe! The only thing I would change is use less butter (the butter was pooling in the sauce by the time the fish was cooked) and use milk in place of the heavy cream and cornstarch to thicken (to make the recipe a little healthier).

Garlic Dill New Potatoes

Yummy! I served these with the Salmon with Lemon Dill Sauce, and they were very complimentary. The potatoes had enough flavor but not too much that we didn't enjoy the salmon flavors. I used dried dill instead of fresh and there was plenty of flavor.

Chicken and Bowtie Pasta with Asiago Cream Sauce

My husband and I loved this recipe! I used diced ham instead of proscuitto b/c that's what I had on hand. I also added spinach to wilt when I added the chicken to the vegetable mixture and topped it all with a little extra cheese! My husband was still exclaiming over the leftovers last night!
