Broccoli, Leek, and Potato Soup

My husband and I loved this soup! Left out the bacon and didn't miss it. I also added fresh mushrooms. Very tasty.

Quinoa Salad with Dried Fruit and Nuts

My husband and I both enjoyed this salad. I used toasted walnuts that I candied using honey. I also used a leek instead of green onions since that is what I had on hand. I agree with other users that said that sesame oil is a must.

Dave's Mocha Chicken

My husband and I were unanimous aboout a 5-star rating for this recipe. I only made a couple of small changes: I added about a teaspoon of dark cocoa powder and a few dashes of cayenne pepper. I also cooked it in a slow cooker and then put it in the oven (400 deg F) for about 15 minutes to glaze the skin. It was super tasty with rice and steamed broccoli and carrots, topped with leftover sauce. Yum.

Lazygirl's Ground Turkey Stroganoff

With the additions I made, I'd give this recipe 4 stars. It's super easy-it took less than 15 minutes total. I thought the sauce really required sour cream for a fuller flavor. I also added half an onion, mushrooms, garlic salt and some fresh parsley. I used linguine instead of egg noodles because that's all I had on hand. I also added a bouillon cube to the pasta for a little added flavor.

Maple Syrup Korean Teriyaki Chicken

My husband and I just finished having this for dinner and we loved it! I followed the recipe except for adding steamed broccoli and carrots into the sauce right before serving. We also served wasabi mashed potatoes on the side which was a fantastic complement. (The husband is still wandering around the kitchen nibbling on leftovers).

Chicken Tortilla Soup V

Yum! Didn't change a thing except I shredded the chicken and added cayenne to spice it up. I made baked tortilla chips from a recipe on this website and it was fabulous meal.

Baked Tortilla Chips

Wow-I had no idea how easy these are to make at home. They came out crisp and fortunately I didn't have any trouble with burning them like other reviewers mentioned. I ended up making several batches using garlic salt as well. We ate them with guacamole and salsa and also in a tortilla soup the next day.

Cheddar Puff Biscuits

I thought these were pretty good while my husband absolutely loved them (which is how they got 4 stars). I was a bit disappointed that they didn't "puff up" more than they did. I threw in some Bacos for some added flavor.

Jen's Heavenly Egg Salad

I was looking for a simple lunch sandwich with ingredients I had available and this was it. Very simple but tasty. I did add to the recipe a bit by adding chopped water chestnuts and some red cabbage to give the sandwich some more texture. Served it on toasted wheat bread with a couple pieces of lettuce. Yum.

Banana Oat Muffins

These are really good!! I substituted the oil with 1/3 cup of applesauce as per other reviews, added chopped walnuts and sprinkled the tops with brown sugar. What a great use of bananas that would otherwise be thrown out!

Lime Chicken Soft Tacos

I agree with a couple of earlier reviews that expressed surprise at the number of 5 stars this recipe has received. After doubling the lime and vinegar, the chicken was still dry and bland and required a lot of tweaking to meet my tastes. I added a bunch of cilantro (didn't use oregano), added 1/2 tsp of chili powder, cumin, liquid smoke, and about 1/2 cup of beer to juice it up. Then it was delicious! I served it with guacamole as well. Yum.

Old Bay® Shrimp Salad

This recipe was quick to prepare and very tasty. My husband called it one of the best shrimp salads he's ever had. I didn't have celery on hand but wanted something crunchy so I added in some chopped water chestnuts. I also added scallions, dried dill and some cayenne for a little kick. We were hungry so I only let it sit in the fridge for about 15 minutes and it was still very flavorful.

Pesto Polenta Lasagna

This is a great alternative to using pasta. I purchased pre-cooked polenta but it was expensive and didn't provide me enough to make 2 layers unless I sliced the rounds thin. Next time, I'll make the polenta myself-it's easy and much cheaper. I sauteed garlic, onions, zucchini and mushrooms, mixed them into some ricotta and added that as an additional layer. The pine nuts on top provide the perfect finishing touch. Yumm...

Curried Cashew, Pear, and Grape Salad

This is an absolutely amazing salad! The blend of flavors is very creative and super delicious. My husband and I ate it all in one sitting! I didn't have fresh rosemary and used dry instead. There was a lot of dressing left over. The next time I make this I'll only make half the dressing. I'll also try adding some goat cheese.
