Vegan Chocolate Cake

This was great! My skeptical husband was amazed that it could be so good. It's slightly less moist than traditional cake but a little fluffier and not as sweet. It really lets your frosting stand out so pick a good one.

Slow-Cooker Chicken Tortilla Soup

I was surprised at how much my family liked this - especially the homemade chips, which I'll be making for snackage! Next time I make it, I will use a little less onion, a little less corn, and add black beans. This time around I added a little rice, which I'm not sure I'll do again. Be sure to use fresh cilantro!

Pizza Crust for Bread Machine

This is the BEST. We now have a weekly pizza night - let everyone spread out their crust and top as desired. Look for "pizza cheese" - we like it better than plain mozzarella. Bake HOT at 500 degrees on a plain cookie sheet for 5-7 minutes depending on crust thickness. If we have more than three people I double this recipe.

Ratatouille Bake

This is fantastic. I used half Fire-Roasted canned tomatoes and half fresh from the garden, and added mushrooms. Also used a 5-cheese blend instead of just mozzarella. I went to put the leftovers away and my family had demolished the whole casserole! Will definitely make again.

My family went nuts for this. I made my own chili seasoning with chili powder, cumin, oregano, seasoned salt, onion powder, and added fresh garlic.

Double Tomato Bruschetta

This is wonderful bruschetta, but I have one suggestion and one caveat: one, if you can find fresh mozarella, do so! Chop it up in very small cubes and use it instead of the shredded. The caveat: DO NOT substitute dried basil! The fresh is soooo good.

Broiled Tilapia Parmesan

My husband, as expected, peeked over my shoulder and wrinkled his nose. "Mayonnaise? You're ruining the fish." I thwapped him with a wooden spoon and chased him out of the kitchen, because I knew he'd like it, and he did. This is going to become a family favorite, I can tell already, and we're not all that big on fish. The topping is absolutely fantastic, and tilapia is unfishy enough that it's just delicious, even for people who don't like any fishy flavor. Try it. Oh.. we added a touch of white wine to the topping and the bottom of the pan while the fish broiled, and some garlic instead of celery salt.

Family consensus on this was "interesting." If you don't like sweet main dishes, don't try it. It was not bad, but I don't think I will make it again.
