Born and raised in south louisiana ~ true cajun. I am 36 years old, married to a great husband, and have beutiful twin boys not even 2 years old yet ;)

Cajun and Good southern cooking~ gumbos, jambalaya, stews, shrimp, redbeans and rice, pasta, and mexican dishes
My favorite family cooking traditions
all of the major holidays...lots of good cooks, lots of GOOD FOOD...also barbecues when we can all get together. That does not happen too often...I have 10 brothers and sisters.
My cooking triumphs
Perfecting Chicken and Sausage Gumbo, seafood gumbo, Beef, shrimp and Chicken Stew, red beans and rice... Have created great homeade Mexican dishes as well.

Cajun Shrimp Soup
This was as good as any restaurant bisque I have had in the past. I had nice blue lump crab meat, so I added it in the last 15 minutes. Also, I know that it has enough fat content already, but when making something for the fam for the first time, I go for all out taste - added a cup of shredded colby/jack cheese at end, and 1/2 can of rotel(suggestion from sis) (Tomatoes and green chile)... thanks! My shrimp and crab were glad they were not wasted!

Easy Chicken Enchiladas
I liked the flavor of these enchiladas more than one other top rated chicken enchilada recipe I tried (That was actually more work involved) So, kudos! Thanks for shariting. Also, I added montery jack and queso cheese with cheddar instead of the colby. I also added freshe sliced green onions.
