Oatmeal Chocolate Chip Cookies I

Tasty, crisp cookies! I used butter instead of shortening. I also took the advice of several reviewers and added 1 tsp vanilla, reduced the oatmeal and chocolate chips to 1-1/2 cups each, reduced the salt, and reduced the cooking time to 12 minutes. Next time, I would probably further reduce the chocolate chips to 1 cup.

Apple Cake I

I incorporated suggestions from multiple reviewers, and really enjoyed this cake. Changes: I left the apple peels on, substituted applesauce for half of the oil, replaced half of the flour with whole-wheat pastry flour, reduced sugar to 1.5 cups (using a combination of white and brown sugar), added 1/2 tsp nutmeg, and added 1 cup chopped walnuts. The cake turned out nicely, and after leaving it on the counter in a covered container I liked it even better the next day! However, even after reducing the sugar I found the cake to be too sweet. Next time, I'll reduce the sugar even further.

Yellow Dhal - Sweet Potato Soup

This one's definitely a keeper! I microwaved the sweet potato to save time and dishes and then just squeezed it out of its skin into the pot with the lentils before mashing. At the end I used vegetable broth instead of water (but only a little so that the dhal was very thick). I used LOTS of black pepper, and also some red pepper flakes. The cilantro leaves contribute a nice flavor.

Light, Crisp Waffles

I'm addicted to breakfast foods, and I make them all of the time. My husband, on the other hand, is not a big fan. But he loved these waffles, and so did I! We enjoyed them so much, that we ate them unadorned. Some modifications: reduced cornstarch (2T cornstarch & 2T oats), reduced salt (1/4 teaspoon), reduced oil (1/4 cup), eliminated vanilla (used 1/2 teaspoon of cinnamon instead).

Grandmother's Buttermilk Cornbread

I made a bunch of modifications but stuck to the core of the recipe, and both my husband and I LOVED this! The two of us finished it off in about 24 hours, starting at dinner (to accompany a vegetarian crockpot chili), then breakfast & snacking. Mmmmm! Modifications: reduced butter (used 1/4 cup butter & 1/4 cup low-fat plain yogurt), reduced sugar (used 1/4 cup brown sugar & 1/4 cup white sugar), reduced salt (used less than 1/4 teaspoon), and substituted in some whole wheat flour (1/2 cup whole wheat & 1/2 cup white flour). Oatmeal Pancakes II

Amazingly easy! Produces healthy, light and fluffy pancakes that cook quickly. I mixed them in the blender, using a 50% white/50% whole wheat mixture for the flour, and only 1/3 tsp of salt. Because I didn't have buttermilk on hand, I mixed a couple of drops of lemon juice with the milk and let it sit for a couple of minutes. I've always been a butter-in-baked-goods person, but I used canola oil as stated in the recipe and loved it! My husband asked for seconds, and he's not usually a "breakfast food" person.
