Oatmeal Chocolate Chip Cookies I
Tasty, crisp cookies! I used butter instead of shortening. I also took the advice of several reviewers and added 1 tsp vanilla, reduced the oatmeal and chocolate chips to 1-1/2 cups each, reduced the salt, and reduced the cooking time to 12 minutes. Next time, I would probably further reduce the chocolate chips to 1 cup.

Apple Cake I
I incorporated suggestions from multiple reviewers, and really enjoyed this cake. Changes: I left the apple peels on, substituted applesauce for half of the oil, replaced half of the flour with whole-wheat pastry flour, reduced sugar to 1.5 cups (using a combination of white and brown sugar), added 1/2 tsp nutmeg, and added 1 cup chopped walnuts. The cake turned out nicely, and after leaving it on the counter in a covered container I liked it even better the next day! However, even after reducing the sugar I found the cake to be too sweet. Next time, I'll reduce the sugar even further.

Yellow Dhal - Sweet Potato Soup
This one's definitely a keeper! I microwaved the sweet potato to save time and dishes and then just squeezed it out of its skin into the pot with the lentils before mashing. At the end I used vegetable broth instead of water (but only a little so that the dhal was very thick). I used LOTS of black pepper, and also some red pepper flakes. The cilantro leaves contribute a nice flavor.
