I've been cooking for years, but I'm not an expert. People do love to eat what I cook.
My favorite things to cook
I love one dish meals. It's so easy to grow a wonderful meal based on the one dish. Jambalaya, Dirty Rice, Lassagna, Shepard's Pie, Chili Mac...all can be great meals with the additions of vegetables and a nice bread (either French bread or cornbread).
My favorite family cooking traditions
I'm Cajun 100%. I cook very hearty, spicy food. I hate that people think pepper makes a food Cajun or Creole. We use SPICE for flavor and a little cayanne pepper for flair. You should never have flames shooting out your mouth, unless that's your choice, but it's not Cajun. Little children are raised on Cajun food which proves it's not pepper hot. I really wish people would stop adding pepper and calling it Cajun.
My cooking triumphs
Gravy is about the hardest thing to make with a great flavor. Rice and gravy is a Cajun staple. I play with the spices so much that I can't even teach my daughter how to make gravy. The flaver depends on the cut of beef or pork, or which parts of the chicken you use. Nothing better than a simple chicken fricassee with the rice and gravy, green peas, potato salad and French bread.
My cooking tragedies
I would guess dried turkey breast. I know I've been unhappy with lots of things, but I can't remember right now.
