Triple Berry Crisp

Loved it. We especially liked having the "crust". It made the dessert less mushy because it absorbs some of the juices from the fruit. I used a frozen mixed berry blend; 5 cups because there was a lot of crumb mix.

Baked Pumpkin Bread

Very yummy and easy - one bowl with stand mixer. I added a few chocolate chips and made into muffins. My kids gobbled them up in no time.

Delicious! 2 1/2 c white flour, 1 c whole wheat, only 1/2 c white sugar. Mine baked at 350C for 55 min.

Slow Cooker Honey Garlic Chicken

Loved it! I followed it almost exactly: there were a few more thighs in my package, plus I cut off any fatty chunks from the thighs before frying. I also thickened the sauce on the stove - easy & fast. Everything was perfect, loved the flavor. Chicken breasts would be great as well, but thighs are more cost effective :) This is another keeper!

Slow-Cooked Parmesan Chicken

This was an incredibly easy meal. I sliced and steamed about 4 carrots (approx. 2 cups), and thawed 1 cup each of frozen corn and frozen peas. I added these for the last hour on high. It was a complete casserole meal with a nice thick consistency. The whole family loved it, young kids too! This is a keeper - I will definitely make this again.

French Dip Sandwiches

Tastes just like the one I used to have at Swiss Chalet. I have made this numerous times and it is always a hit. I like to toast the buns and top the meat with caramelized onions and shredded cheese (swiss is good).

Rhubarb Stir Cake

I added 1/4 applesauce because the batter was so dry I could not mix the dry with the wet. I also had to add the sour cream earlier then suggested just to get everything mixed together. It turned out great in the end. Not too sweet, so it goes really nice with whipped cream.

Soft Whole Wheat Sugar Cookies

Consistently soft and absolutely WONDERFUL. I have made them a few times and have successfully replaced 1/2 the butter with applesauce. So I use 1/4 butter, 1/4 c. applesauce. They are still soft and irresistible. I also made the apple pie spice mix with 1/4 c. cinnamon, 1 Tbsp. allspice, 2 tsp. each nutmeg & ginger, 1/2 tsp. cardamom (optional).

Weeknight Chicken Cordon Bleu

We all loved it. I didn't bother browning the chicken (too much hassle with the toothpicks). I just cooked it in the oven without the sauce for 10 min. to brown, then added the sauce and cooked for 10 or 15 min. longer. I have made it for friends a couple times and it has been a hit everytime.

Vegan Stew

Unfortunately, no one in the family liked this one. It wasn't very flavorful and my daughter particularly did not like the parsnips. Perhaps if I had used different veggies it would have been better. Corn might have added to flavor and color also.

Game Day Hamburgers

The stuffing is a little more time consuming but it makes the patty big and juicy. I suggest preparing the stuffing after the patties are ready so the potatoes do not turn brown. Also, I did not add the mushrooms. Anyhow, the burgers were a big hit with our guests.
