Perfect. Simply, perfect. I made to recipe the first couple of times (we're usually pancake eaters one Sunday a month) - the last two I made minor adjustments - the first time, I added chopped apples and 1/4 tsp of cinnamon, the second, I made "health-wise" adjustments - substituting trans fat free and salt free margarine for butter, using 1 cup of milk and 1/4 cup of unsweetened applesauce, reducing the salt and sugar - salt to 1/4 tsp and sugar to 1/4 tsp. They still turned out great (although obviously I could taste that the butter was missing). Still, my husband and I both loved them and this recipe has become our go-to pancake base. I grew up in a house with boxed pancakes - these are much better, and I look forward to the day when I can have my kids making pancakes with me.
