Tuna Noodle Casserole from Scratch

I think this is a great, simple tuna casserole that easily stands in for and exceeds the Tuna Helper of my childhood! I took one reviewers suggestions and added 1/4 tsp of nutmeg and 1/2 tsp of thyme leaves the second time around and the flavour was much improved. I found the recipe as-is a bit lacking in flavour (as far as our palette preferences go). The second time around I also used low-fat cheddar, margarine, and lactose-free, 1% milk to accommodate our various health issues/consciousnesses and it still turned out great. The bread crumb topping was difficult to work with but tasted great....my husband and I loved it.

Good Old Fashioned Pancakes

Perfect. Simply, perfect. I made to recipe the first couple of times (we're usually pancake eaters one Sunday a month) - the last two I made minor adjustments - the first time, I added chopped apples and 1/4 tsp of cinnamon, the second, I made "health-wise" adjustments - substituting trans fat free and salt free margarine for butter, using 1 cup of milk and 1/4 cup of unsweetened applesauce, reducing the salt and sugar - salt to 1/4 tsp and sugar to 1/4 tsp. They still turned out great (although obviously I could taste that the butter was missing). Still, my husband and I both loved them and this recipe has become our go-to pancake base. I grew up in a house with boxed pancakes - these are much better, and I look forward to the day when I can have my kids making pancakes with me.

The Best Rolled Sugar Cookies

I'm a first time cookie-baker - I've always been intimated by a cousin who made baking sound soooooooo difficult - as though she was the best and nothing could be as good as her baking! This year I stepped in to do some Christmas baking for our family, and included this recipe - it worked out great! It was easy, tasty - perfect!

Eileen's Spicy Gingerbread Men

This was my first time making gingerbread of any sort, and compared to whatever recipe my cousin makes each year when she makes hers, I find that these are great. I've never really cared for gingerbread, but following this recipe to the letter, I've come to really like them. As other reviewers noted they aren't really "spicy" but nicely spiced. I found I was having a lot of trouble rolling the dough out and not having it stick and fall apart (making me think I screwed up somewhere), but thanks to my husband showing me "the trick" (slower rolling relying more on pressure than speed), I got the hang of it and every batch turned out great!

Chocolate Macaroons I

I think these are pretty close to ones my cousin usually makes. The flavour was great (albeit very sweet, even with semisweet chocolate chips and unsweetened coconut). I substituted large flake oats for the walnuts (some family members just don't like nuts). Like others, I had a really hard time getting my egg whites and sugar to peak - any suggestions? I gave up and went with what I had, which was fine. I ended up getting about 20 out of the recipe, and found that I had made my quite large as well....I will try and drop them much smaller next time. The dropping process itself - so messy - they didn't really "drop" - not without a lot of assistance!

Spanish Rice II

I felt that there was a bit too much water and the rice came out quite soft. I'm used to my Spanish rice being a bit firmer. I used paprika instead of the chili spice (didn't have any on head). The flavour seemed to be missing something (could've been the true chili spice)...Overall a really nice rice though, that I will definitely make again!

Braised Balsamic Chicken

Great recipe! I'm fairly green in the kitchen and I usually make a mistake or two on the first try, but this one went smoothly. It looked great and tasted even better. I threw it a bit extra balsamic vinegar, simply because my husband and I are big fans of it. I also used whole plum tomatoes and just pulsed them in the blender......unfortunately I didn't have any diced on hand. I might try using fresh plum tomatoes, too.

Low Sugar Strawberry Rhubarb Crunch

This is a great basic recipe. I did take the advice of other reviewers and used 2 small tbsp of flour (I used whole wheat) to soak up any juice. I also used frozen strawberries instead of fresh. I look forward to making this for potlucks and family gatherings!

Balsamic Cream Sauce

I think it's a great sauce, but I definitely made a mistake along the way. I tried using light cream instead of heavy cream, and I accidentally left out the butter. I also used light cheese. I found even before I added the cheese it was forming small clumps. I'm not sure if this was because of using light cream or not. It still had the right flavouring, so we got over it, although I did add a bit of skim milk to try and thin it out a bit. Tastes great, though!

Apple Enchilada Dessert

Like most I agree that it is much better with fresh apples. A side of french vanilla ice cream with the sauce poured over is great too.
