Two Ingredient Pumpkin Cake

I give this five stars with the following changes: use German chocolate cake mix, half cup of Apple cider, plus a tsp. pumpkin pie spice. Then top with chocolate coconut cream cheese frosting (recipe found on allrecipes). Fantastic

Overnight Blueberry French Toast

I used a raisin breakfast bread and kept the 2 packages of creamed cheese instead of cutting back to 1 as some others suggested. I also sprinkled cinnamon between layers and again on top. Serve with whipped cream. It definitely takes longer than 30 minutes to cook. My family loved it, even my picky middle daughter. Will definitely make again. Perfect for Christmas morning!

Rosemary Roasted Turkey

I use fresh thyme and sage instead of basil. I put the mixture on/in the turkey the night before. On the day of, I stuff the turkey with quartered onions, a few stalks of celery, and a few carrots. The best turkey ever!

Garlic Prime Rib

Excellent! This was my first attempt at Prime Rib. Very easy! I followed the recipe with two exceptions: I started at 450 for 15 minutes rather than 500, and I lined the pan with 8 celery stalks before putting the meat on top. It was a big hit and I will make it again.

Peanut Butter Vegetable Chicken Soup

Great soup, with a few changes. When cooking the chicken, add a little curry spice. Instead of regular potato, use sweet potato. Add a little chili powder and a few red pepper flakes, if you like it spicy. Also, make brown rice and serve the soup over the rice. Ummmmm. Everyone in the family loved it, including my 14, 11, and 8 year old girls.

Rhubarb Strawberry Crunch

Excellent! I made a few modifications, though. I used more strawberries (2-16 oz. packages, quartered) and I used a little more butter, 1 c. plus 3 tbsp. The crumble was just too floury with only one cup of butter.
