Happily Married!!!Living in CT and enjoying my job in a resort/casino as a Table Games Dealer. Where else can you play cards,roulette,ect, and get paid for it? Meeting new people all the time, and talk about wht I'd like to try to make for dinner for my husband,and friends if they're brave enough to try.

My cooking triumphs
making a gingerbread house for my sr. high school trip to the CIA (Culinary Arts of America) to be raffled off, and winning it( people said it was fixed) but I knew it wasn't.
My cooking tragedies
when I was 12 making porcupine meatballs (I'm a child of 5) threw raw rice instead of instant because I always seen mom throw rice in it. They came out crunchy and hard, but i did remember to pour the gravy over them to bake.

Connie's Zucchini "Crab" Cakes
Instead of using bread crumbs I used panko crumbs, omitted the old bay and used fresh cilantro. Added 1/4 cup of the frozen mex corn mix and 1/2 cup shredded cooked chicken for a main meal. Drain the shredded zucchini. Served them w/ Marie's chipolte ranch dressing on the side.

Tasty Fried Eggplant Balls
I made these tonight and my husband loved them. I also threw some chopped spinach in them and baked them in an oven at 350 degrees sprayed w/ cooking spray cooked 15 min then turned them over and cooked an additional 15 min. til brown. It's an alternative way to cook healthy,TYVM Marbalet!!!

Toffee Bar Coffee Cake
made this recipe but instead of the chopped peanuts I've used chopped pecans , and served it warm w/ a carmel sauce and whipped cream for dessert. TYvm for sharing
