Best Beef Enchiladas

Really great recipe. I almost always have all of the ingredience on hand. The 1st time, I followed the recipe to the letter except that I used corn tortillas. I cannot use flour tortillas for enchiladas. I have images of a gummy, soggy leftover. The 2nd time, again followed the recipe almost exactly but I added the olives and cheese into the meat mixture. So much easier and it made the meat more of the star instead of olive. Next time, instead of using canned enchilada sauce, I am going to make one on this site. I will update my post if it makes a big difference.

Best Spanish Rice

I really like this. Its yummy but easy and the simmering time is perfect for getting the rest of dinner and the table set. I followed the recipe to the letter and see no reason to change it. My only comment is that you want to be sure to use a salsa that you really like. It will make the dish for you.

Crab-Stuffed Mushrooms

These were ok. Now I am on the site looking for a recipe to use up the bag of imitation crab. If you make these, think about a way to punch it up, hot sauce or parm might help.

Chicken Noodle Soup

My "go to" soup anytime someone starts sniffling and sneezing. We have had 3 rounds of colds in this house this winter and I have made it for sick friends, so I have used this recipe many times. Here are some suggestions below. Do: Double the carrots if you like them in soup. Use 6 Knorr extra large bouillon, it makes a difference Dont: Do not add extra noodles. I did because I thought it looked like there was going to be too much broth. Everyone loves the broth and my leftovers were dry. The 8 ounces is perfect. This recipe is easy and delish and I swear by its ability to kick a cold to the curb!

Delicious Ham and Potato Soup

I followed the recipe exactly but added a chopped carrot, celery, and 2 handfuls of shredded kale because I had them on hand. If you love kale like I do, it does something magical in this soup. I let all of the veggies boil until the kale softens and then add the potatoes. This is a great recipe and very flexible!

Elegant Orzo with Wilted Spinach and Pine Nuts

So yummy! I followed the recipe exactly but threw in a handful of diced red onion at the end to keep them crunchy. I also used halved cherry tomatoes because it is what I had on hand. To keep the cost down, I think I will replace the very expensive pine nuts with slivered almonds next time.

Wisconsin Five-Cheese Bake

This was ok. I was looking for a easier mac n cheese recipe and this one is pretty easy but I found it a little bland. I may try it again but I might add some hot sauce to spice it up.

Bean Soup With Kale

I love this healthy soup. I had some kale and low-sodium chicken broth that I needed to use. The only change I made was a little veggie broth because I ran out of chicken broth. I will be making this soup again and again because it is the perfect batch to make on Sunday for lunches through the week. Tip: it is much better the 2nd and 3rd day, if you can keep people from eating it before then.

Laura's Unbelievable Chicken and Pasta

My cherry tomato plant went crazy so I went looking for a recipe to use some of them. This is a great basic recipe. I did do what another reviewer suggested and used Rondeles cheese spread (reduced fat) instead of cream cheese and it came out pretty good.

Rainy Day Cherry Crisp

I searched for rainey day and this came up. Seriously, the name is perfect. Its simple to make, it makes the house smell amazing, and every bite is warm, sweet and crunchy. I followed the recipe exactly and it is perfect. Who cares if its pouring and cold outside when you have this! One warning, swat any hands that can not wait to dig in. This stuff is lava hot when it first comes out. My boyfriend will tell you as soon as his mouth heals.

Salisbury Steak

Jalapeno Ranch Salad Dressing

I am giving this 3 stars because it is a wonderful idea. However, I thought the recipe still needs some work. I think 2 Ranch dressing mixes was too strong. I will try this again but with only 1 package and add the 2nd a little at time until it is the way I like.

Garlic Prime Rib

Just like almost everyone that has reviewed this recipe, I had never cooked a prime rib before and was so nervous. Especially when one of our guests said, "You are just now putting that in the oven. You know those take like 5 hours!". I explained the recipe that I was following and said we will see. This is just incredible, incredible, incredible! I followed the recipe exactly with mouth watering results. Use this recipe when you want to "wow" someone with your mad cooking skills.

Family Casserole

I do not like giving bad reviews but this bland recipe is just not worth the incredible effort. I will stick with the recipes that use uncooked rice and chicken. One reviewer said that curry might add some flavor and if I ever have leftover chicken and rice, I might try that. However, I doubt this will be made again in my house.

Awesome Chicken Noodle Soup

LOOKING FOR THAT SOUP TO MAKE FOR SOMEONE YOU CARE ABOUT WHEN THE ARE ILL?????? THIS IS IT!!!!!!! We had a stomach virus go through our house like crazy. I made this and it was perfect. Its full of flavor and isn't sodium packed liked the canned stuff. The only changes I made: I used halved, skin on, chicken breasts on the bone (we don't like dark meat) and I shredded my carrots because I have a picky kid. THANK YOU TO THE AUTHOR!!!!!!!
