I really enjoy cooking and trying new recipes. Taking as much fat out of a meal as I can has become a hobby.
My favorite things to cook
I'm cooking more fish lately. I have started keeping a diner style ketchup bottle filed with a low fat mayo and wasabe mixture for baked salmon and a low fat mayo and sour cream mixed with hot sauce a little lime juice for baked white fish.
My favorite family cooking traditions
My mother is a natural born cook, she is amazing. I know I will never have the talent that she has but I strive to have half the ability.
My cooking triumphs
I got my 2 sons and my 2 nieces to play restuarant with me. We cooked and served a fancy 7 course dinner to my parents and siblings. It was so much fun and a huge hit. I got every recipe from allrecipes.com.
My cooking tragedies
I have had a few of those. I tend to burn bread....I don't know why but it is a curse!!!

Best Beef Enchiladas
Really great recipe. I almost always have all of the ingredience on hand. The 1st time, I followed the recipe to the letter except that I used corn tortillas. I cannot use flour tortillas for enchiladas. I have images of a gummy, soggy leftover. The 2nd time, again followed the recipe almost exactly but I added the olives and cheese into the meat mixture. So much easier and it made the meat more of the star instead of olive. Next time, instead of using canned enchilada sauce, I am going to make one on this site. I will update my post if it makes a big difference.

Best Spanish Rice
I really like this. Its yummy but easy and the simmering time is perfect for getting the rest of dinner and the table set. I followed the recipe to the letter and see no reason to change it. My only comment is that you want to be sure to use a salsa that you really like. It will make the dish for you.

Crab-Stuffed Mushrooms
These were ok. Now I am on the site looking for a recipe to use up the bag of imitation crab. If you make these, think about a way to punch it up, hot sauce or parm might help.
