Fresh Asparagus Soup

I followed previous reviewers' suggestions and used a stick blender and added cumin and garlic. Easy, tasty, low-fat soup. Will definitely make again, using the base recipe, with potatoes, and with broccoli instead. Versatile recipe.

Chimichurri Sauce for Steaks

I love this sauce on both steaks and chicken. I reduced the olive oil to 1/2 cup, and I don't think the flavor suffered at all.

Bananas Foster II

Perfectly simple dessert. I followed the advice of another reviewer and pre-scooped the ice cream in bowls and put them in the freezer before prepping the sauce. The extra chill helped the ice cream hold up to the warm topping. I also used spice rum, which compliments the cinnamon. Delicious, and sure to be made many times in our house.

Lower Fat Banana Bread II

Very moist bread; easy to throw together; will definitely make again. I followed the advice of other reviewers and added a third banana and several dashes of spices (nutmeg & cinnamon this time). Even with the third banana, it was light on the banana taste, but still a very good breakfast/tea bread.

Banana Bread VII

Very easy and very good - will definitely make this recipe again. It's lighter than more traditional recipes, both in texture and in calories. I made a few adjustments, based on previous reviews: I used low-fat Bisquick; I used brown sugar instead of white sugar; and I reduced the sugar to 3/4 cup, because I increased the bananas to 1 3/4 cup (4 bananas).

Baked Halibut Steaks

This is my now my favorite method of preparing halibut. After the first bite, my husband declared that it has to go into our permanent rotation of recipes. The beautiful results of this dish belie how easy it is to prepare. I used red onion, and I am happy I did. The soft pinkish-red hue of the carmelized onion contrasted nicely with the white fish. I also left out the zucchini (because I forgot to buy some), and I don't think the dish suffered at all. I've served this halibut with leftover gazpacho and with a Greek salad. Anything with a Mediteranean flare would pair nicely.

Gazpacho with Avocado and Cumin Chips

Excellent spicier version of gazpacho, and the cucumber and cumin chips complimented it well. As is, the recipe has a chunkier texture, similar to salsa. A quick swipe with a stick blender would make this smoother and more traditional (which I plan on trying next time). To make preparation easier, I used a large can of diced tomatoes in juice. After I removed the tomatoes, the remaining juice was the same amount called for in the recipe.
