Chicken Scampi II

Reviewed: May 1, 2007
I have made this recipes many times, since it's my daughter's favorite. I increase all the ingredients since I serve it over a pound of angel hair. I do decrease the butter & oil a touch & instead add Robusto Italian salad dressing & capers to the mixture, it adds extra flavor & color. My family loves this recipe, but it sure isn't for anyone that's trying to eat healthy.

Cranberry Sauce I

Reviewed: Nov. 28, 2006
I made this for Thanksgiving, and got raves from everyone. I never ate cranberries, but it looked so easy I decided to try it, and even I liked it. I did take suggestions from other reviews and slit the orange juice with water, added some cinnamin, cooked down about 30 minutes and sat in the fridge overnight. Came out perfect.

Black Bean Vegetable Soup

Reviewed: Oct. 1, 2006
I just made this tonight, and it turned out very good. Made the following changes: used three carrots, 2 stalks of celery, four cloves of garlic, about three 1/2 tsps. of hot mexican chili powder, two tsps. of cumin, used three cans of beans (drained all, then pureed half with two jalapenos and some beer to make the right consistency) & added a can of petite diced tomatoes with green chiles. I simmered this for around two hours. Turned out really good, just the right kick for my family - everyone loved it.

Lisa's Easy Chicken

Reviewed: Jan. 31, 2006
Maybe it's just personal preference, but I followed the directions to the T and neither myself or husband cared for this recipe at all. Can't put my finger on what it was, just didn't like it.

Italian Pork Tenderloin

Reviewed: Jan. 28, 2006
I thought this recipe was very good. I did make some changes though. I don't care for sage, so I substituted basil, oregano & garlic. Added additional chicken broth & milk (didn't have cream). At the end I thickened with cornstarch & water. Thought this was a very good recipe, next time I think I'll try chicken instead. Sure is worth a try, quick & easy, too.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Jul. 7, 2005
I did make quite a few changes to this recipe, so I couldn't really taste the sauce that well. Next time I think I'll make it as is and see how it turns out. I added leftovers from camping (keilbasa, italian sausage & pork kebobs), added a can of drained & rinsed cannelli beans, which I love with pasta & sausage & I didn't have any heavy cream so I used all half & half. I was very easy to make and very quick. It did have a really good taste to it, I just couldn't really taste the sauce everyone had raved about. I will try making this again without throwing everything but the kitchen sink in (but I'll keep the beans). Definetly worth trying.

Texas Ranch Chicken

Reviewed: Jun. 30, 2005
Super easy recipes. Great for a quick dinner after work. I was a little skeptical, but it turned it really good. I tried another recipe on the back of a ranch dressing bottle and it wasn't nearly as good. The whole family enjoyed this. You can't get any easier, and for cleanup, I just lined the pan with nonstick aluminum foil - in and out of the kitchen quick. Very tasty for such a simple recipe.

Chicken, Garlic, and Sundried Tomato Pasta

Reviewed: Jun. 28, 2005
This recipe was extremely quick and easy to prepare. I did use bagged, cooked chicken breast, which turned out fine. I also added some basil & oregeno. My family thought is was really good for the amount of time put in. Give the recipe a try when you need something quick, filling & tasty.
