Gluten Free Pastry

I've been experimenting with gluten-free recipes to be able to make meals for some of my gluten-free friends. Because I was using this recipe as a pie crust for a chicken pot pie, I omitted the vanilla extract and subbed butter for the shortening since it was what I had on hand. It had trouble rolling it out and transferring it to my pie tin- the bottom crust was easily remedied as I just pressed it into the pan with my fingers... the top crust not so much. It worked well enough for my purposes though- even my non-gluten-free family liked it! I plan on using it as a base for additional recipes. Thanks for the recipe!

A Different Carrot Raisin Salad

This was SO yummy! The combination of flavors and textures is fantastic. The clever addition of shredded coconut, celery, and nuts is different, but oh-so-good! Definitely puts 'traditional' Carrot Raisin Salad to shame. Thank you for a great recipe that was a hit with the whole family AND with company. Will make again!

Sourdough Pancakes

Doubled this recipe (following it to a 'T') to make about a dozen pancakes. I've been looking for ways to use my sourdough starter other than for making bread, so thought I'd try these. This was my first experience with making sourdough pancakes and I'm not sure what I expected but the sourdough flavor was just too strong for me. While I loved that they were thin, the sourdough flavor was just way too strong and I'm not sure what, if anything, might be done to change that. My kids liked them though, completely doused in syrup, but I will probably not make them again.

Easy Chicken and Broccoli Casserole

I have made this a couple of times, each time modifying the recipe preparation methods to suit my schedule and personal preferences- i.e. using frozen broccoli vs. fresh steamed broccoli, making the rice well ahead of time (many times using leftover rice from a different meal), etc. I also do what another review suggested in making and using my own cream of chicken soup. This recipe is GREAT! Very yummy... really love the combination of all the flavors and the crunch the almonds bring. Thanks for this great recipe!

Low Sugar Strawberry Rhubarb Crunch

My neighbor gave me a bunch of rhubarb and I came across this great recipe to help me use it up... I loved that this recipe didn't have gobs of sugar and used honey as a sweetener instead. Perfect for a picnic served with vanilla ice cream. Was a big hit with our guests! Will make again. Thank you for this recipe!

Fruit Salsa with Cinnamon Tortilla Chips

Very easy, however I did what others suggested and baked the chips instead of frying them at 350 for about 10-12 minutes. Got rave reviews from everyone! Will make again- planning on using leftovers in my yogurt. Yum! :-)

Calzone

I used this recipe as a base for a new calzone recipe I was creating- the fact that the calzone dough was made in a bread machine really saved me a lot of time, which I appreciated. My rating is for the dough only, as I added my own filling. Turned out super yummy! Thank you for this recipe- it's a keeper in my recipe box!

Ginger Glazed Mahi Mahi

This recipe was awesome... it was a great way to introduce my hubby and kids to fish. My husband, who swore he'd never eat fish, gobbled this up. Both my kiddos did too and were asking for seconds. The combination of the flavors in the sauce are what makes this dish so wonderful. I marinated for longer than the recipe stated because I put it away in the fridge earlier in the day for the sake of convenience later. Super easy, family friendly dish. I served it with brown rice, green beans and a salad for a fast, healthy dinner. Will definitely make this again!

Lentil Soup III

This soup was great and was a big hit for my picky eaters- they even came back for seconds! I doubled the garlic and used a can of spaghetti sauce instead of the tomato paste. I also added some shredded carrots for extra color and flavor. I served it with warm pita and a salad. This is an easy soup to play around with to fit to what you have on hand as well as to suit to your own taste. I'll be making this again!

Very yummy good-for-you snack! I've made these quite a few times now, both with and without the powdered sugar topping. They make a great healthier option for desert and are a great snack as well. Thanks for the recipe!

Zucchini Herb Casserole

Excellent! I made this with not quite the amount stated of the green onions (probably 1/8 cup vs. 1 cup stated in the recipe) because it was all I had, but the combination of all the flavors was awesome. I did double the rice and added about 1/2 cup extra cheese because I wanted to make sure we had leftovers. Added some extra garlic too, per our taste. I think you could probably serve this directly from the skillet as I plan on trying next time (to save time). Even my picky eaters who don't care for tomatoes and who usually balk at zucchini gobbled this up. Will definitely add this to our recipe rotation and look forward to making this again soon... Thank you for this great, easy recipe!

Truck-Stop Buttermilk Pancakes

These were so easy and SO yummy! First off, I halved the recipe since I didn't need so many pancakes. Also, since I was running out of sugar at the moment, I only used about 1 T- still great! My kids gobbled these up with local Grade B syrup. Yum... Will definitely make again!

Minty Orzo Lentil and Feta Salad

This was a great salad! I used black olives instead of kalamata just because it was what I had on hand. The combination of flavors from the herbs was great! I would not however recommend this to a family with picky-eaters, but the well-seasoned palette will appreciate the combination of flavors and think it to be delicious!

Chicken Lo Mein

My family LOVED this recipe! I omitted the mushrooms and onions due to picky eaters, but it was still packed full of flavor! I think next time I will try to make it with a thinner noodle, like maybe spaghetti or angel hair. I will definitely be making this again and it is a great alternative to Chinese take-out!

Aunt Blanche's Blueberry Muffins

These muffins were excellent! They really put boxed muffin mixes to shame. I added a bit of cinnamon sugar to the batter (maybe 1 tsp- 1 1/2 tsp) and topped them with sugar before baking. These were a big hit! My family gobbled these up in an afternoon. I wish I had doubled the batch- now I have to make them again!
