Baked Fresh Rainbow Trout

Simple and delicious. I used a mixture of fresh herbs from my garden which added flavor and lightness. Onions, lemon, salt and pepper and you're done! The serving size seems wrong tho. My husband and I can eat a fish apiece (he could probably eat more) so cannot imagine two fish feeding six people - even little munchkins! I would allocate a fish per person for adults.

BBQ Pork for Sandwiches

Nothing gourmet but certainly satisfying and simple. I added half an onion. I did not put the pork in the oven but after reading a couple of reviews I will give that a try next time.

Grilled Brown Sugar Pork Chops

No great shakes. Did not mind the sweetness but nothing that was too exciting. We had very thick pork chops so perhaps the sauce did not permeate? Marinate ahead of time? I like the idea of using Jack Daniels. :-)

Grilled Montana Trout

How can you go wrong with fresh trout? If you do, it's user error. :). Our error was that we had truly whole fish and were not able to butterfly them properly. I suspect it is because we are city folks and not familiar with how to filet. Soooo...it was hard to put all the 'stuff' inside as it kept falling out and then when cooked..lots o bones and mess. We did figure out how to get rid of the spine which helped but the recipe did not say to cut the fins or tail so we left them on which caused some angst in the form of more bones. Bottom line - taste was great but I would have preferred proper filets. Used fresh herbs from my garden including dill, cilantro and rosemary. Delicious but watch those bones!

Cheesy Poblano Chicken Enchiladas

Biggest problem here is that my grocery store did not have the Creamy Poblano soup sooo...my review is based on the substitution of Chicken Chili Black Bean I had to use. Not sure why the store did not have as I live in a major metropolitan area? I made sure they knew. All that being said, it was still pretty darn good...hubby loved. I added black olives and served with sour cream. Very satisfying.

Pineapple Grilled Pork Chops

Agree with all the reviewers who said this was very tender. I only marinated it for 4 hours so next time I will do the overnight thing and bet it will be even better! Make sure you have a good pork chop to begin with and the rest is a breeze.

Cheeseburger Salad

Pretty darn good for something so simple. A tasty alternative. We used spinach instead of lettuce as the base and poured blue cheese dressing over the whole dang thing. Might try sweet pickles next time.

Mexican Gump

Very good with some tweaks. It is bland as written but perhaps those with less spicy taste would be ok with that. I mixed in taco seasoning and cilantro and served with lime-flavored chips. I could definitely see using chorizo instead of ground beef. As with many recipes from this site, one needs to gauge the audience and cater to those tastes.

Great flavor but I agree with some of the other reviewers who say that 1 cup of chicken broth would suffice. While tasty, the sauce was too thin for my taste even after simmering for quite a while.

Honey Baked Chicken II

Very good. It's a versatile recipe that I will be playing with next time I make it. 1/4 cup butter is plenty as other reviewers have noted. I will double the curry because we love curry and also add a couple of cloves of crushed garlic. Sprinkle green onions on top. As other reviewers have said, this recipe can be used with most any chicken 'parts'. I used skinless thighs just to be a bit healthier but I bet that skin would be delicious! Maybe next time I will splurge with that extra fat. Just that once of course...:-).

Perfect Ten Baked Cod

Simple and delicious way to bake cod! It's very important to use loins rather than filets. Seems like many of the negative reviews were due to overcooked or mushy fish which most likely means the fish was too thin for this recipe.

Spicy Seafood Shell Appetizers

Quite good - got rave reviews at Super Bowl party. Giving 4 stars because, as many other reviewers noted, some tweaks can make this recipe better. I usually follow a first time recipe as written which I did with this one. It was really tasty and rich but I tend to agree with other reviewers who said it was a little too mayonnaise-y. I used canned shrimp and canned crab meat and had no problem with that at all. I also used prepared phyllo mini tarts as the recipe noted. I live in a major market and found these in my local grocery store but they may not be available everywhere. Lastly, I definitely would kick it up a notch with more hot sauce and red pepper flakes. Personal preference. Overall, very good and with some minor changes..a 5-star recipe! Thanks for sharing.

Quite good. My husband and I ate the whole pot with a loaf of garlic bread. Used sherry instead of wine and canned tomatoes instead of fresh but still delicious!

Chef John's Spinach and Feta Pie

Very good...I had some kalamata olives which I added albeit sparingly because of the salt. Turned out just as promised. Note that the video and the recipe are different, at least with regards to cooking the spinach. I sauteed mine. Will make again!

Party Chicken Salad

This is SO good! The different flavors meld together beautifully. I used mandarin oranges instead of the pineapple as another reviewer mentioned. Next time I will try more curry for a bit stronger taste. Yum!

Garlic Cream Sauce over Chicken Breasts

Tasty. Only 4 stars because I used milk instead of cream to save on calories. Also needed a bit more spicing up for our taste so sprinkled a bit of cayenne on top of chicken/sauce. Served on a bed of spinach for a complete meal.

Jay's Hearty Breakfast Skillet

I halved the recipe because I only had 4 eggs and it was plenty for 4 people. Used hash browns to save on cooking time like several others and used italian sausage instead of bacon. What fun to experiment with the variety of ingredients that could be used in this fun and hearty breakfast. I put the eggs on top of the whole 'mess' and covered the skillet. The eggs turned out sunnyside up and the presentation was restaurant-worthy. I agree with other reviewers who used cheddar cheese rather than American. Yummy!
