Party Chicken Salad

This is SO good! The different flavors meld together beautifully. I used mandarin oranges instead of the pineapple as another reviewer mentioned. Next time I will try more curry for a bit stronger taste. Yum!

Garlic Cream Sauce over Chicken Breasts

Tasty. Only 4 stars because I used milk instead of cream to save on calories. Also needed a bit more spicing up for our taste so sprinkled a bit of cayenne on top of chicken/sauce. Served on a bed of spinach for a complete meal.

Jay's Hearty Breakfast Skillet

I halved the recipe because I only had 4 eggs and it was plenty for 4 people. Used hash browns to save on cooking time like several others and used italian sausage instead of bacon. What fun to experiment with the variety of ingredients that could be used in this fun and hearty breakfast. I put the eggs on top of the whole 'mess' and covered the skillet. The eggs turned out sunnyside up and the presentation was restaurant-worthy. I agree with other reviewers who used cheddar cheese rather than American. Yummy!

Special Italian Easter Pizza

Meat lovers unite! As others have noted, this is not an everyday type of meal. But for special occasions or hungry teenage boys...what a hit! I make it in a 9x13 just because of convenience. Springform looks prettier tho. Thanks for the recipe.

Sweet Slow Cooker Ham

WAY too sweet. Between the chai tea and the pound of brown sugar, the sweetness was overwhelming. I doubt if I will try this again, but if I did, I would halve the brown sugar. I had a 9 lb. ham too.

Bacon and Tomato Fried Egg Sandwiches with Horseradish Mayo

Nothing gourmet about this recipe but sure fits the bill for a hearty weekend breakfast. Simple to make with common ingredients. I love the variations possible in the sauce. We used American cheese but any cheese would be delicious. We baked the bacon and served open face to make it more caloric-friendly.

Thyme-Rubbed Steaks with Sauteed Mushrooms

Mama's Asian Chicken and Rice

Although I'm rating this a '5' as is, I do think I will boost it up next time. The sauce is to die for. I should have doubled like so many others have said. This recipe is going into my 'box' but I will add peanuts and perhaps some snow peas next time. It would be even better with crunch! If you do not have the Chinese 5 spice...get it..order it online if you have to. It makes this dish..along with the wonderful orange flavor.

Erin's Cheesy Broccoli Soup

Excellent recipe and perfectly heart-warming for a cold winter's day. I doubled the recipe (thank goodness!) and it turned out restaurant-quality. My teenage girls loved it tho they said they would prefer 'chunks' of broccoli. I used my immersion blender to make a really smooth soup but next time will leave some chunks and perhaps make some of the additions suggested by others. If not, it's excellent just the way it is. Thanks!

Chocolate Mint Cookies I

Quite good and made the kitchen smell great. How can you go wrong with chocolate and mint? Gave it a 4 instead of a 5 simply because, while delicious, it's not particularly unique. A tasty, crowd-pleasing cookie for the holidays or all year round.

Brownie Pie

This turned out a mess for me. First of all, the picture shows a round cake yet the recipe calls for using a 9x13. To me this makes a huge difference in the moistness of the brownie base and cooking time. Secondly, the pudding mixed with only 1 cup of milk was not spreadable on the brownie base at all. I think I used 2 cups as per the pudding package directions. The whipped topping and the crushed mints chocolates I put on top were delicious tho!

Sweet Hot Mustard Chicken Thighs

Marinated for 6 hrs. using boneless, skinless thighs. Between Chef John's comment and another reviewer, I figured they would work fine. Trouble is, cooking time should be adjusted. Boneless cook faster than bone-in. I took the thighs out earlier than what the recipe called for (could tell they were done) but they were still a bit dry. I was also expecting more flavor 'pop' with the ingredients of the marinade. Might give it another whirl with bone-in.

Root Beer Pork Chops

As other reviewers have said...SO wanted to like this recipe. Everybody loves root beer, right? The biggest problem I had was that the reduction sauce did not reduce. I was expecting a thick, sweet, almost bbq-y consistency but mine was all liquid despite simmering it for over half an hour. So in essence we had no sauce. Not sure what happened but that is 3 cans of root beer I will never get back! :-(

Jalapeno-Blue Cheese Burgers

Fabulous burgers. I do agree with a few of the other reviewers that 6 jalapenos could be too much but it depends on your taste. I use 2. Only other change is omitting salt. Between the powders, the blue cheese and the soy sauce...no salt is necessary for our taste. It's a keeper tho!
