New Orleans Corn Bisque with Smoked Sausage

Reviewed: Dec. 7, 2010
I followed this recipe exactly as written, except I cut the servings to 4 and added Tony Chachere's Creole Lite Seasoning.

Maple Apple Crisp

Reviewed: Dec. 4, 2010
I cut the maple syrup to 1/2 cup and the butter to 1/4 cup. However, there was alot of liquid on the bottom of the pan. I used Fuji apples and I know they are not baking apples.

Herb Biscuits

Excellent and easy. I did not change a thing. However, next time I will reduce the butter as the bottom of the pan was a little greasy and also use only 1 teaspoon of dried dill weed.

Pico de Gallo Chicken Quesadillas

Excellent recipe. I use my George Foreman to make quesadillas. I spray one side of each tortilla and start stacking the ingredients. There is no need to flip.

Finally, a recipe without nuts. I added a combination of dried fruit (including the raisins). We sprinkle it on yogurt. Excellent and easy.

Basic Ham and Bean Soup

Reviewed: May 6, 2007
Excellent, Excellent, Excellent. I made a few minor changes: used 4 cups of low sodium chicken broth, 2 ham shanks and no salt. I removed the meat from the shanks (1 cup) and then added 1 cup of ham.

Terry's Texas Pinto Beans

Reviewed: Jun. 19, 2005
Very very good. I also used red salsa instead of green. As the beans needed additional liquid, I added more chicken broth. I made tortillas to go with them and my husband loved them. Over the years, I have tried numerous recipes for pinto beans, but nothing as good as this. Looks like I can quit looking.
