About this Cook
I'm a stay at home mom to a 6 year old and a 5 year old and one more on the way...I was previously an elementary school teacher. My kids love to help me cook so we try to make something every day together.
My favorite things to cook
I love cooking things that are family friendly and that can be prepped ahead of time. Dinner time can be hectic at our house, so meals that are done in the slow cooker or prepped in the morning are usually our favorites. We also love to have friends over to play, so kid friendly snacks such as muffins, granola bars, and cookies are also some of our favorites.
My favorite family cooking traditions
My mom is a great cook, but other than that no one else in the family likes to cook. We don't have a ton of traditions, but we love Italian food, and lots of comfort foods.
My cooking triumphs
I am just starting to host more family dinners and holidays. I have yet to cook a turkey dinner, so I think that is on my list of things I want to try soon.
My cooking tragedies
For some reason, meatballs have always given me problems. I am on a quest for the perfect, easy meatball recipe.

Plain Egg Less Cake
My son has an egg allergy so finding good baking recipes is always a challenge. This cake was FANTASTIC. Very moist and tender, not heavy like others I have tried. I did take the advice of another reviewer and used cake flour instead of AP and added a tsp. of white vinegar to the batter (I do this as well with my chocolate eggless cake). I made this as cupcakes and they were wonderful...very light and fluffy. A must try for someone with an egg allergy.

Molasses Cookies
These are by far the BEST molasses cookies I have made. I have tried countless recipes and this one is perfect. Just the right amount of chewiness on the inside with a slight crisp on the outside. My only suggestion is to NOT refrigerate the dough. I prefer to use it right after mixing. I have never had a problem with stickiness which I think is because I use a cookie scoop and drop the balls right into the bowl of sugar. They come out uniform and perfect every time. It's hard to eat just one!!!!

Irish Cream Chocolate Cheesecake
This cheesecake was amazing. I took advice from other reviewers and upped the irish cream to 1/2 cup. It was just enough. You could taste it without it being overwhelming. The chocolate was also great...not too dark, just enough. Although I bake a lot, I don't make cheesecake often. This came out well, just one little crack. I did do pans of water in the oven as opposed to a water bath (I was afraid of it seeping into my cheesecake) and I used ingredients all at room temp. I would definitely make this again...everyone really loved it.
