Tender and Easy Buttermilk Waffles

Great way to use kefir. Super easy and took 2 minutes each in the waffle iron. Maybe other waffle recipes are richer but they take about twice as long to cook. I whipped a double batch up and fed a family of 9 with minimal time standing in front of the waffle iron. Added a little more sugar and doubled the vanilla.

Pennsylvania Dutch Sour Cream Cabbage

Still delicious with a lot less sugar and vinegar. I used a large head of cabbage, 1 stick butter, 1/2 c sugar, 1 c vinegar, and the 2 cups of sour cream. It was very rich. Next time, I think I will use 4 T butter, 1/2 sugar, 1 c vinegar and 1 c sour cream, which in my book is still a pretty rich vegetable recipe. Don't get me wrong, it tasted great with all that butter and sour cream, but it could still be great with a lot less.

Bierock Casserole

I was looking for a good venison recipe. This fit the bill, although I modified it by adding a 27 oz can of kraut which I chopped up a bit and 8 oz of cream cheese. I originally had planned on adding sour cream, since this is a Polish recipe, but I had the cream cheese on hand. I think it would have been too thin had I used the sour cream. Also, next time, I plan on just trying a regular pie crust.

Pepperoni Bread

This recipe is awesome! I'm 13 and I go to a farmer's market and sell baked goods. This is always the first item to go! I do not add the Italian seasoning though, and I brush the top of the bread with a little bit of the beaten-up egg so it gets a nice brown sheen as it bakes. If you use home-made pizza dough like me, make sure the dough is not to sticky, or else it gets hard to roll up. I've also substituted salami for the pepperoni, and that was a big hit!

Pecan Cream Cheese Squares

Quick and easy with what you have lying around. I used chocolate cake mix. Next time, though I would probably increase the cream cheese to two packs and drop the sugar to two cups. I was looking for more of a cheesecake flavor, but it wasn't too noticeable as is.
