Jemput Jumput (Banana Fritters)

I made a few minor adjustments to this recipe including using gluten free baking mix instead of regular flour. I cut the recipe way down since I realized how many servings it is for! There are only three in our household! Lol. I used brown sugar instead of white and fried them in coconut oil. Since I realized these were not what I consider traditional banana fritters I was happy with the outcome. They are not fluffy so if that is what you are wanting, skip this recipe. But, they have a nice banana flavor and even though you may think they are too dark let them fry to a deep brown on each side. I recommend this for anyone looking for a change to their regular fritters!

Roquefort Pear Salad

This was an absolutely show stopping salad and easy to make as well. I did not use the sugar and used an aged balsamic vinegar for the dressing. I would recommend this to everyone.

Chococonut Chip Cookies

these are awesome! I didn't have unsweetened coconut so I cut the sugar in half. And I also used a vanilla bean instead of the extract. great flavour! Next time I will use some oats to give a bit of texture.

Old Fashioned Potato Salad

Veery simple to make! And delicious. I decided to make a homemade potato salad at the last minute (literally) and this was very quick and easy to make. The only things I did differently is I used regular chopped pickles instead of the sweet relish and I added about 1/2 cup of bacon bits. It was a hit!!

Rosemary Turkey Meatloaf

I made this for company last night and servd it with rosemary/garlic mashed potatoes and thyme green beans. It was so good. I can't say enough about this recipe. The only thing I changed was the addition of some chopped sundried tomatoes as mentioned by some other reviewers. Very lean and moist!!

Thyme Green Beans with Almonds

I made these with french green beans and did it exactly as the recipe said. What an easy awesome side dish. With the toasted almonds sprinkled over top it looks very appetizing as well.

White Chocolate Raspberry Cheesecake

I made a few minor adjustments just for my own taste and ingredients that I had on hand. I didn't have white chocolate so I used reg chocolate chips and I didn't want the chocolate throughout the cake so I just added the chips to the batter once it was all mixed. I left the berry mixture unstrained and the berries whole so when you bite into the cheesecake you get little chunks of berry and chocolate intermingled! Instead of the half and half used for melting the chocolate I added sour cream to the batter. This cheesecake looks and tastes very impressive. Thanks!

Sandy's Chocolate Cake

I made this cake the other night thankfully for only my husband before I was going to try it out on guests......needless to say, mine tasted AWESOME but.....it did NOT look like the picture. I couldn't get the layers to stay put! One thing, is I used a different cake icing and added toasted coconut to 1/2 the icing. It did taste amazing though so I will try again. VERY VERY moist.

Awesome Sausage, Apple and Cranberry Stuffing

I had been using a very traditional bread stuffing recipe in the past but decided to kick it up a bit with this version. WOW am I glad that I did. One of my guests said that she usually hates stuffing...well, she had 2 servings. This one changed her mind!

this will be my second time making these. The only adjustment that I made was to cut back on the garlic a bit. Just depends on your garlic clove size how many you want to use!! And, make sure EVERYONE eats the garlic!!

Lower Fat Banana Bread I

I am giving this 4 stars because of the modifications that i make. If not for that, it is a 5. No white sugar, I use brown. Also, go for the butter and not marg! Add 1 tsp vanilla. I use 1 c whole wheat flour and 2/3 c finely ground oats. Sometimes I add 1 c choc chips and other times not. Thanks

Low-Fat Blueberry Bran Muffins

these are awesome. I couldn't find my muffin tins so just baked it as a cake and then cutinto squares. I omitted the white flour and substituted finely ground oats. Also, didn't have apple sauce so I used a thawed banana mushed up. Great flavour and very moist!

Costas French Market Doughnuts (Beignets)

oh my goodness oh my goodness!!! I was craving donuts so badly and decided this was the recipe for me. So glad that I did! I have never had the "real" ones but if they taste this good...they would be awesome. Huge recipe but good if you can take them to work or have a hungry family! Next time I will try filling them with some vanilla pudding and drizzling with some choc syrup for a nice presentation.

Simple Whole Wheat Bread

do not hesitate in making htis bread. It rises beautifully and turns out HUGE loaves. I added sunflower seeds and next time will cut back on the white flour and try with more whole wheat. I did cut back a bit on the honey but not too much. Great tasting loaf!

Tofu Fudge Mocha Bars

I just love these! I cut the sugar by just over 1/3 cup,cut the coffee to only about 1 tbsp, added 1/2c toasted chopped almonds,and sprinkled choc chips over the top! YUM!! I also baked them in a smalled pan to make them thicker. great recipe! ps-even the batter tastes good!
