Beef Pot Roast

Made this pot roast last night and was very surprised. Normally I do not like meat overcooked (which is usually the case with potroasts). This turned out moist and even slightly pink. I did perk it up by adding 1/4 cup each of red wine and beef broth. Thank you for an excellent recipe.

Crumby Potatoes

I had forgotten about this recipe. Thank you for reminding me how good it is. I always used Italian breadcrumbs and baked them, covered, for 1/2 an hr. Uncover and bake until tender. Excellent with roast turkey or chicken.

Raisin Nut Brownies

Italian Pork Tenderloin

Made this for my husband and I and it is certainly a keeper. I did brown the tenderloin first, removed it and made the sauce separately. Added the tenderloin at the end and allowed it to heat thru. Pork remained juicy and tender amd it certainly is a perfect company dish. Served it with coucous cooked in orange juice. Thanks.

Scottish Oat Scones

No Bake Sugar Free Cheese Cake

Thank you for an elegant dessert I can now serve to diabetic friends. I also make it with regular jello (orange flavor) and substituting orange liqueur for part of the water.

Chocolate Date Cake II

This is a wonderful cake. Try it reheated and topped with icecream for a real treat. I also add 2 Tbls. of dark rum to the liquid and dates, but allow the cake to sit a couple of days to ripen. Thanks.

Buttermilk Pound Cake I

This recipe appealed because of the buttermilk and simplicity. I did make some changes because the original recipe I found to be uninteresting and a little dry. I subsituted 1/4 cup butter for some of the shortening and used the grated rind of 2 lemons rather than lemon flavoring. Also I glazed it with a simple icing made from lemon juice (real) and icing sugar.

Lemon Chiffon Cake

This is an excellent cake. I have been making chiffon cakes of different types for years. This is the best lemon one to date and have topped it with blueberry sauce which seems to be enhanced by the lemon flavor. A keeper. Thanks.

One - Two - Three - Four Cake II

Thank you for reminding me of this wonderful basic cake. My mother made it frequently and I had lost the recipe. It is definitely, in my opinion,an excellent layer cake. Make with butter and pure vanilla plus chocolate frosting it is heavenly. Thanks again

Mexican Baked Fish

Thank you for a great recipe and so easy. We love salsa and it seems to pair very well with fish. Suggest a squirt of lime juice over the fish before adding the salsa.

Zucchini Mediterranean Style

A good basic recipe and healthy, but felt it needed some spicing up. Added 1/2 cup sliced black olives plus a 1/4 tsp. of red pepper flakes. Also used coucous and topped it with grated parmesan. This recipe has many possibilities, and certainly worth keeping. Thanks.

Ratatouille

Glad to get a baked recipe for zucchini and eggplant. This is very good, but does need some spicing up. I add about 1/8 tsp red pepper flakes when suateeing the garlic plus some mozarella and old cheddar between layers. There is a lot of flexibility with this dish and one can use their imagination. It certainly does not have to be dull. Thanks again.

Kansas Tomato Sandwich

This is a good simple sandwich. I have been making a similar one for years but use whole wheat bread plus a few thin slices of red onion. Lots of possibilities here. Thanks - it is nice that something so simple can be good.
