Love the Mama Lemon Bars

Reviewed: Oct. 11, 2011
Made many lemon bars but this one is very good with the confectioners sugar - it does not need flour which we likedl. Used a slightly smaller pan that way there is a thicker layer of filling.; Please leave this recipe as it because it is written exactly the way the contributor wanted it to be made.

One - Two - Three - Four Cake III

Reviewed: Oct. 10, 2011
This is an excellent base for a yellow cake. I use butter. No way does this cake turn out dry if you follow instructions. The butter and sugar require a lot of beating......it is not a cake to make in a hurry. Sure beats any cake mix out there either doctored or otherwise. I also like to separate the eggs, beat the whites until thick and hold soft peaks and fold in .....

Pork Chops with Apples, Onions, and Sweet Potatoes

Reviewed: Oct. 10, 2011
We love this combination but find it is much better to brown the chops in a little oil on each side- otherwise they tend to taste stewed and much jucier this way.

Health Nut Blueberry Muffins

Reviewed: Oct. 9, 2011
These were really nice for a change of pace in blueberry muffins and certainly lend themselves to different fruits.

Blueberry Oatmeal Scones

Reviewed: Oct. 9, 2011
These scones will not be dry if you substitute buttermilk for regular milk. Also, when it comes to adding liquid to scones you have to add it more gradually..............all flour is not the same. In other words use caution. Very very few recipes are perfect. For example, I live in Canada and if I use an recipe from the U.S. I have to use less flour.......

Blueberry Buttermilk Coffeecake

Reviewed: Oct. 7, 2011
Many things about this recipe that appeal to us and, for once, a cake that is not loaded with sugar but still tastes wonderful. Unfortunately, felt that it needed more flavoring hence lots of grated lemon rind (we love lemon). I definitely agree that there is absolutely no substitution for fresh buttermilk - for texture, taste and end result

Apple Harvest Pound Cake with Caramel Glaze

Reviewed: Oct. 5, 2011
What is there not to love - please don't change this recipe. Granted it isn't for every day because it is rich but great for special occasions.

Blueberry Ricotta Squares

Reviewed: Oct. 4, 2011
Lovely moist dessert except I will not use lemon flavoring - lots of lemon zest instead. One reviewer substituted wholewheat flour - in something like this that is not a good idea because this flour is drying to start with. Every now and then it is okay to be a little sinful and this is one time it is worth it.

Creamy Buttercream Frosting

Reviewed: Oct. 3, 2011
excellent BUT please follow directions. This requires a lot of beating otherwise it is not successful. Like most things, the results are worth it..............not too sweet or cloying.

Italian Confetti Pasta Salad

Reviewed: Oct. 2, 2011
Sorry, but amazed how many great reviews this has received. To us it is a very ordinary and commercial buffet type salad - again sorry for the rating, but it just does not have anything that stands out - the only saver is the fresh basil.

Moroccan Lentil Soup

Reviewed: Sep. 29, 2011
Liked most ingredients, but as some other reviews commented, the Garam Masala does not belong so subtituted Moroccoan spices. Of course the face that my husband doesn t like this spice had soe bearing on my changes. For some reason or another I feel that lentil type soups should have North African spices.

Perfectly Moist Irish Wheaten Bread

Reviewed: Sep. 27, 2011
As a Newry native this is close to my mother's recipe but I use half white and half brown. Good recipe but just a little to heavy on the wholewheat for my taste. Thanks - good to see this one in print.

one of my favorite cakes and I can t leave it alone........easy to make and requires no adjustments. Thanks for such an easy and wonderful tasting recipe. It may be sound gourmet but who cares - to me it tastes better than a lot of so called facy cakes I have had in restaurants.

Orange Crunch Cake

Reviewed: Sep. 23, 2011
Not very often I given a 5 rating, but this cake is superb and wouldn't change a thing. Of course we love orange so the amount of zest listed is perfect. Thanks for a lovely addition to my files.

Orange Yogurt Bread

Reviewed: Sep. 21, 2011
This is one of the best sweet breads on this site - actually I consider it a cake because it is so rich tasting and that is how I have it filed. If you use all butter it also makes it even better.

Irish Soda Bread

Reviewed: Sep. 20, 2011
This is the closest recipe to the real thing I have encountered anywhere on the internet. My mother taught me how to make this type of bread when I could barely reach the table. Only difference being that she used all buttermilk (which came from our own dairy and that sure made a difference) and her own home made butter. What can I say - those days are gone.

Creamy Celery Casserole

Reviewed: Sep. 19, 2011
We really like celery in this house but I prefer it cooked so this recipe hits the spot. The only changes I made were to accommodate our tastes and that is use fresh mushroom and red peppers. Thanks for a good side dish which will get used often.
