Basic Buttermilk Muffins

I love baking with buttermilk because always produces a tender muffin. I am sure that this recipe calls for too much flour. I find that 2 cups is ample and this way do not have to add more liquid. Also suggest using an ex. large egg. Hope this helps

Treacle Tart

I am rating this a 4 for the idea because treacle (similar to our molasses) tarts are popular in Britain but Golden Syrup is a totally different product..........so perhaps the title is wrong.

Pineapple Sour Cream Pie

Very rarely make any time of cream pie (except lemon) but the sour cream takes this into another realm - don't changr a thing because this is perfect. Invite your friends if it is too big for 2.

Pepper Chicken Piccata

A very colorful version of chicken piccata and so easy to achieve. Agree with one reviewer that it could do with less onions and a bit of white wine as well as the lemon juice. Certainly going in my files for company dinners that I want to keep simple and attractive.

Ultimate Corn Bread

I normally do not give a 3 rating (I just do not rate at all) but felt that the reason this bread can be dry and fall apart is using biscuit mix. Have rarely had success, to my way of baking, using bicuit mixes. They are something to be used as a last resort.

White Cake with Lemon Filling

Can t understand some of the problems encountered with this simple cake I do suggest you use cake flour (sifted before measuring) which gives a lighter texture. Also you will need to add about 2 tbsp. more.

Lemon Curd

Excellent lemon curd and very versatile other than spreading it on scones or cakes. Try it in meringue shells topped with raspberry or blueberry sauce. Also fold in some whipping cream, pile into dessert dishes and top with either of the above sauces. Just a few hints from this cook.

Breaded Brussels Sprouts

Aunt Blanche's Blueberry Muffins

I don't know who Aunt Blanche is but she knows a good muffin. Never liked muffins with oil so this recpe suits us very well. It is a little heavy on sugar for our taste but cutting back by 1/4 of a cup works fine. Also, someone suggested cake flour and that would make them more like a cupcake - a good idea. Some lemon rind ups the flavor which is always good with blueberries. Please do not make too many changes to this recipe because it does not need them.....

Herb Baked Salmon

This is a wonderful way to cook salmon and it still retains it's true flavor. Too much oil for our liking so cut back and substituted crushed garlic for fennel. We like lots of garlic. Whatever, it is excellent and will be used often. Surprised it hasn t been reviewed before now.

Blueberry Sour Cream Pound Cake

Finally a pound cake that does not have a cake mix as a base but separating the eggs and folding in the whites gives much lighter and better texture. Nearly always the cake in this type of cake

Broccoli Soup

Have been making this soup for a long time. Only changes being that I use leeks and add some hot pepper flakes. Great, easy and healthy - nice to have a soup that does not call for milk products.

Love the Mama Lemon Bars

Made many lemon bars but this one is very good with the confectioners sugar - it does not need flour which we likedl. Used a slightly smaller pan that way there is a thicker layer of filling.; Please leave this recipe as it because it is written exactly the way the contributor wanted it to be made.

One - Two - Three - Four Cake III

This is an excellent base for a yellow cake. I use butter. No way does this cake turn out dry if you follow instructions. The butter and sugar require a lot of beating......it is not a cake to make in a hurry. Sure beats any cake mix out there either doctored or otherwise. I also like to separate the eggs, beat the whites until thick and hold soft peaks and fold in .....

Pork Chops with Apples, Onions, and Sweet Potatoes

We love this combination but find it is much better to brown the chops in a little oil on each side- otherwise they tend to taste stewed and much jucier this way.

Blueberry Oatmeal Scones

These scones will not be dry if you substitute buttermilk for regular milk. Also, when it comes to adding liquid to scones you have to add it more gradually..............all flour is not the same. In other words use caution. Very very few recipes are perfect. For example, I live in Canada and if I use an recipe from the U.S. I have to use less flour.......
