Sour Cream Coffee Cake III

For us just too much butter because using 3/4 of a cup produces an exceptionally moist cake (or bread). Also, some complaints about it not rising and the answer for me was to add 1/2 tsp. baking soda which is normal when using sour cream or buttermilk. Other than the above (and of course to our tastes) it is a good reliable coffee cake.

Salmon Salad

We eat a lot of canned salmon (very good here) but always red. Anyway, really like this recipe which is a pleasant change from the norm. Just a little too salty for us and I substitute about 1/4 tsp. of lemon pepper. Good sandwich and very popular for a quick lunch or shower.

Peach Crisp III

Baked Snapper with Mandarin Oranges, Cashews and Ginger

No red snapper but works well with salmon and would probably be good to roast a chunk of salmon.

Cheesy Mashed Potatoes

Totally sinful but good!!! Those who have had trouble with it thickening up might not have used BAKING POTATOES. I would think that is the problem.

Creamy Carrot With Curry Soup

We really enjoy this soup as do our guests but because it seemed a bit too sweet I add 1/2 cup fresh orange juice. Gives it a lovely flavor.

Outrageous Chocolate Chip Cookies

I have had this exact recipe for years and made it often when our girls were living at home. Do not make cookies now but highly recommend this one. Good to see it in print. Also it is easy.

Vegetarian Four Cheese Lasagna

Lovely and fresh lasagna sheets definitely much better than the dried stuff. This recipe can also be made with roasted butternut squash.........in the same manner as the pumpkin.

Good recipe indeed but the title is misleading. Maybve it could be called a 4 pepper lasagna. Certainly not very spicy.

Hamburger Pie I

As written we do not like it but found it much better tasting and more appealing to look at if made with tomato soup (good brand). Also cut back on cream cheese by 1/3 cup and omit canned vegetables. Better to serve a fresh vegetable on the side.

Hamburger Pie II

This has been popular with everyone in our house and have made it for years. The amount of Worcestershire sauce in this recipe is just too much - at least for our taste buds. Perhaps it is a mistake in the printing. Can understand why someone complained......this pie can also be seasoned with thyme rather than seasoning salt.

Zucchini Pineapple Bread II

Good bread recipe but have to reduce sugar for our tastes and also add some cinnamon. For those who had trouble with it sticking the simple soution is to line your loaf pans with bakers paper - or even aluminum foil that has been greased with either shortening (not oil) or Pam.

I am giving it this rating because of the choice of ingredients but otherwise needs a lot of modifications - in which case it would be a very different recipe. Those that rated it high changed it a lot so can't go by that......sorry

Curried Pumpkin Soup

Coming from a non pumpkin eater this is very good but a little too sweet. Substituting Granny Smith apples seems to make a big difference.

My Mother-in-Law's Plum Bread

Love plums and this bread. The addition of a tbls. of orange rind makes it even better for us. The same problem exists with ratings unfortunately because you cannot rate a recipe with 5 if you have totally changed it. Sorry, but this is always happening and no doubt hear it all the time.

Flapper Pie

So long since I have had this pie or even heard of it. This is a great recipe and, like another reviewer mentioned, prefer it with a regular pie crust. When whipping egg white adding a pinch of cream of tartar keeps them from weeping. I do this with lemon meringue pies and it works.

Chocolate Rum Cake

Very good as written but felt that dark rum gave more flavor....at least if you like a stronger rum taste. Definintely allow to sit for a couple of days before using to develop the flavors.

Kay's Shortbread

Only reason I did not give this a 5 rating is because it really does not need baking powder. Have many many different recipes for shortbread and each gives a slightly different texture. The texture of this is perfect and please only SOFTEN the butter because if you melt it you will be disappointed.
