Beef Stew VI

Good basic stew but needs some more seasoning. Also, substitute 1 cup of dry red wine for 1 cup of water....................big improvememnt and definitely tastes better made ahead

Scottish Shortbread II

This is a good basic shortbread recipe but it is better if you substitute 2 tbsp of the flour with rice flour. Also, shortbread sould age for a few days before eating and that way it is not nearly as crumbly. Have been making many types of shortbreads for years and they will keep for weeks in a covered tin just on the shelf

Roasted New Red Potatoes

Just easy crispy and simple potato recipe...no changes needed. For those of you who felt that the heat was too high...at a lower heat you do not achieve such a nice crispy crust and also has a better flavor.

Blueberry Lemon Bread

Lemon and blueberries are a great combination. This loaf, for my preference, is much better and lighter if the butter and sugar is extremely well creamed together. This also seem to result in a better flavor as well..........................try this method and you might be surprised at the result.

Very good basic scone recipe but needs a little more sugar. These are much better than the popular Savoy scones....but then we prefer using buttermilk for sofness and taste

Blueberry Crumb Bars

Very good and so nice to see a bar recipe with fruit filling that isn't sickenly sweet. We prefer to use half butter because shortening does not have as nice a flavor and also better is better for you. Granted these are quite rich but go a long way. Just too much shortening by itself is our only complaint.

Linda's Awesome Brownies

This is one of the best brownie recipes on this site. Much prefer brownies that are made with chocolate and no baking powder. For those who feel they are not sweet enough try substituting half semi sweet chocolate.

Italian Meat and Spinach Pie

Love this pie. The recipe is use for something like this does not go soggy (I use the same for quiche) so do not have to bake blind. It is called pate brisse.

Meat Pie, Southern Version

Really like this take on a meat pie.............quite different than most. I find that it is better just to line the sides of the baking dish with the puff pastry and that way no chance of the bottom being soggy. Puff pastry is great as long as it is puffy. Thanks for a good addition to my files.

Lemon Sauce I

Great recipe for lemon sauce and so versatile because it can be used on other cakes and not just gingerbread. If you are a lemon lover like us then you can add more zest. We do cut back on sugar but that is our personal tastes. Should be in everyone's file for ever and ever.

Blueberry Buckle

Have tried this recipe as written here but we were not satisfied because it was too dry. Anyway, after making some adjustments as fololows it is better for us: reduced the flour to 1-3/4 cups and substituted butter for shortening. Also used half sour cream and half milk. Served with blueberry sauce and whipped cream flavored with lemon juice and rind.............yum

Mascarpone Strawberry Cupcakes

Could not believe how well they turned out. Prefer a raspberry sauce on top with a little whipped cream. Really does not need too much dressing up because they stand on their own.

Icelandic Christmas Cake

Not sure why people have had problems with this cake..................maybe didn t follow directions. Anyway, love this type of cake the only snag being here is that we do not like cardamon and had to omit it. Add the rind of a lemon instead and gives a lovely flavor. When it comes to baking time for cakes I always check long before the time supposed to be used is up because ovens differ. Only makes and this is also a suggestion to new bakers.

Grandma Johnson's Scones

Excellent recipe and works beautifully followed as per the directions. Someone said they might be better without the egg........scones nearly, nearly always have an egg or two whatever depends on the amount of flour. I was brought up eating and baking scones so have tasted good and bad. Scones, like biscuits, are better eaten fresh.

Taste is okay but with all that cream of tartar they dry out too quickly. Some adjustment necessary in liquids. Might play around with this and try to avoid using cream of tartar..........going to search my files for another recipe.

Kate's Chocolate Cake

Much much better than most cake mix chocolate cakes. Could not find the organic buttery spread so substitute 1/2 cup melted unsalted butter which was cooled. Seemed to work just fine if someone else out there doesn t have what is called for. Great flavor and texture.

Cinnamon Coffee Cake III

This is a tried and true favorite recipe that has been around for awhile but have never never used shortening. Someone complained about it being dry and that might be the cause. Granted shortening makes for a lighter textured cake but does not have the taste of butter. Or you can use half butter and half shortening but not all shortening.

Lemon Cheesecake Squares

This is a wonderful recipe for cheesecake type squares and so easy. For a change of pace try using homemade lemon curd (you can also buy it but not as good) in place of the jam. Gives it even more of a lemon taste.
