Darra's Famous Tuna Waldorf Salad Sandwich Filling

This makes a wonderful sandwich. For us we use water pack white tuna and omit the relish but otherwise perfect. Also good on homemade brown or flax bread or any type of wholewheat bread. Thanks for the submission

Pork Chops Italiano

Good recipe but we always use pork blade chops because the loin usually dry up quickly (even with bone in). Just because of our tastes add sliced black Olives and lots of fresh parmesan on top. Certainly a recipe to add to the file so thank you so much

Pork Medallions with Balsamic Vinegar and Capers

Excellent and can be used for company or just every day. Love the fact that the medallions can be cooked just until tender and not overcooked like a lot of pork dishes. Personally I can t eat any meats or poultry that is cooked even a little bit dry so this fits the bill.

Pasta Bake

Surprised this was so good but did need a bit of extra seasoning, at least for us and no kiids around either makes a difference. Fresh mushrooms and some garlic plus red pepper flakes and then it is a 5 star recipes and easy as well. Some day am going to try adding a handful or so of fresh spinach.

Creamy Chicken on Linguine

Very good recipe and also extremely easy to put together but did need some hot pepper flakes and also some fresh parsely (just gives it some extra kick). It is honestly not fair when someone rates a recipe as wonderful after it is totally changed as the chef wrote it. Thank you chef for a very good , tasty and easy entree.

Beat and Bake Orange Cake

This is a lovely light and moist cake. Ingredients we normally have on hand and so easy to make. Does not really need a frosting but a dark chocolate one would enhance the lily. To give it a deeper orange flavor it does need orange zest and, as one reviewer suggested, orange liqueur. Thanks for a great contribution to this site and my files.

Cherry Glazed Salmon

An unusual change for salmon and very very good but not the sort of recipe I would use on a regular basis. Definitely use fresh cherries, if possible, just no way that artificial tasting cherry pie filling is going to suffice. It is indeed unfortunately that some reviewers actually wrote a review after having used the filling

Jim's Cheddar Onion Soda Bread

First time very disappointed because of the texture and then realized that it did not have any baking soda (which is necessary when using buttermilk). Anyway, now use 1 tsp. baking powder and 1 tsp. of baking soda hence it tastes more like my own soda bread.

Pumpkin Gingerbread

Love pumpkin and ginger so the combination is great but away too much sugar for us and even cut it in half. This is because we do not like anything too sweet and also cutting back on sugar for health reasons. You could substitute some Splenda for the same reason.

Special Salmon Steaks

Have had your recipe in my files for quite awhile but only got to making it last weekend. We thoroughly enjoyed it and my husband said it was even better than our normal barbecued ones...so that is really good. I am going to make it again tonight but will add some lemon zest besause we really like lots of lemon. Thanks for a recipe that will also be used to company....it is simple and deightful

Trio of Mashed Roots (Parsnip, Turnip and Carrot)

Guess this is the first time I have ever seen this mixture in print. My goodness (coming from N. Ireland) this was very very popular and even now I still make it. My Canadian husband loves it. You can adjust seasonings to your liking but do like this one for a change. Highly recommend as a side dish plus it is also healthy.

Blueberry Cream Cheese Pound Cake I

I rarely use cake mixes doctored or otherwise but this one is actually very very good. My family devoured it. I did substitute French Vanilla cake mix for the other suggested and also, as I usually do, used 1/2 butter. Am sure it is just as good as written but am used to using this method.

No Bake Lemon Cheesecake

Have made this recipe (and similar) many times but always cut back on sugar because it really is not needed. ALSO RECIPE SHOULD HAVE STATED THAT EVAPORATED MILK HAS TO BE WELL CHILLED IN A BOWL AND ALSO THE BEATERS, can understand why some people could not get it to whip. Also better to use a stainless (or such)bowl because sometimes plastic has a greasy layer on it....this also goes for whpping crea. 2 tbsp. of lemon juice are a great addition. If you follow the above tips you should have absolutely no trouble with this little pie which is great for beginners.

Good basic stew but needs some more seasoning. Also, substitute 1 cup of dry red wine for 1 cup of water....................big improvememnt and definitely tastes better made ahead

Scottish Shortbread II

This is a good basic shortbread recipe but it is better if you substitute 2 tbsp of the flour with rice flour. Also, shortbread sould age for a few days before eating and that way it is not nearly as crumbly. Have been making many types of shortbreads for years and they will keep for weeks in a covered tin just on the shelf

Roasted New Red Potatoes

Just easy crispy and simple potato recipe...no changes needed. For those of you who felt that the heat was too high...at a lower heat you do not achieve such a nice crispy crust and also has a better flavor.

Blueberry Lemon Bread

Lemon and blueberries are a great combination. This loaf, for my preference, is much better and lighter if the butter and sugar is extremely well creamed together. This also seem to result in a better flavor as well..........................try this method and you might be surprised at the result.
