Mocha Nut Bread

For me this is a very moist bread which is the way we like it. I cut back on the amount of coffee (that may be why some reviewers felt it was bitter) because instant coffee is very potent.

Cinnamon Bran Muffins

I rarely rate anything under a 4 but felt that this recipe can be excellent (complaints about if being runny) but should sit at least 5 hrs. (or overnight) before baking. You will see a big difference.

Have made this dish several times in different forms - this one is very good but prefer the zip of either hot Italian or sweet Italian sausage. Also I add some garlic becuse we love the stuff. Thanks for remininding me to start making it again.

Lemon Yogurt Pound Cake with Lemon Glaze

We love lemon so accumulate a lot of lemon breads and cakes. As written I have rated this a 4 but only because of the shortening taste. Suggest using 1/2 butter and you will see a big difference in texture and taste. Again, I only rate a cake as written because there is no point in rating something that has been totally changed. This is not fair to others.

Best Tuna Melt (New Jersey Diner Style)

This was my first time to make a tuna melt!!!!!! and decided to prepare it for friends for lunch. Everyone loved it and definitely the Red Wine vinegar makes a big difference. Also rye bread enhances the flavor. Even my husband like it and he really isn t keen on canned tuna.

Fast Chicken Soup Base

Very happy to get this recipe but prefer to chill it after cooking (before adding other ingredients). This mean making it either early in the day or the previous evening but then you can skim off any fat that has accumulated. Also, we feel it has a better flavor.

Absolutely love this simple cake - guess loving orange flavor does help, but this is really an almost perfect mixture and I thank you for submitting. Very good with 7 minute icing.

Stuffed Zucchini with Chicken Sausage

This is an extremely tasty dish but had no idea what size of zucchini to use hence had leftover filling. Maybe the contributor could enlighten everyone as to the size of the vegetable. Again, the filling is wonderful.

Banana Bread II

There seem to be a lot of complaints about this bread being dry . I always cream butter and sugar very well, add eggs one at a time and the very ripe bananas alternately with flour, but do not overmix. Has never been dry and my only concusion is that others may have overbaked it.

Asparagus Quiche

We love fresh asparagus and indulge in it as often as possible. Roasting seems to be better, but either way this is a great recipe. Have a suggestion to replace the bacon and that is to use about 1/4 - 1/2 cup of slivered smoked salmon plus some dill for seasoning. Thanks for a nice addition to my files.

This is an excellent cake and sorry that it was not a success for a lot of you. Unfortunately, for this type of cake, you require time and patience and cannot be made in a hurry. Instructions need to be followed exactly and the result of all your labors is worth it. As to the controversy between hand mixers and standing ones I have used both and it can be made with a hand mixer successfully - just requires more time and patience.

Shortbread

Amazed there are not more shortbread recipes around with rice flour - these are the most authentic and gives that wonderful texture that can t be accomplished otherwise. Thanks for a great recipe - very similar to what I have used for years and won many prices for same.

Rougemont Applesauce Cake

For us this is an excellent applesauce cake. some recipes are more like breads but because pf the cake and pastry flour this is definitely a cake. Much lighter than most and keeps so well. I do make it with half shortening and half butter because of flavor. Thanks for a lovely addition to my files.

Crunchy Apple Bread

Love this bread but read the other reviews first so decided to use butter rather than shortening. No way was it dry and very flavorful. Also used concentrated forzen (thawed) orange just to give it a little more kick. Butter always seems to give such a much better texture and flavor over shortening. Thanks for a lovely addition to my files.

Gingerbread Scones

I love scones, ginger and molasses but, as some reviewers said, they are a little dry. Sorry for giving them a lower rating but I feel that the following is an improvement: use 1 whole large egg and substitute 1/3 cup of sour cream for milk (possibly more to get the right consistency). Have made this version many times with no problem. Good luck......

Molasses Cake

Wonderful cake but you have to like molasses. Did cut sugar in half (molasses is sweet enough). From reading the ingredients it is very apparent it is for molasses lovers only and if you want to cut back on the molasses flavor subsitute corn syrup.

Unfortunately the directions are not clear enough especially when people have never had Welsh tea cake. Definitely make on a griddle - otherwise the results are far from good.

Steak House Au Gratin Potatoes

This is our all time favorite - actually a classic as far as I know. Sometimes I add fresh rosemary depending on what I am serving. Difficult to judge exactly how long they take to bake because it depends on what type of potato I use but do prefer not to precook.
