Great little cake for a small family Please NOTE everyone that it does call for a small cake mix otherwise you have wasted your ingredients.

No Bake Lime Mousse Torte

Reviewed: Aug. 22, 2011
A dessert (cheesecake) to serve to any company - the gingersnap crust makes a big difference and marries very well with the lime. Thank you for something wonderful, especially on a hot day!!!!

Extreme Veggie Scrambled Eggs

Excellent not only for breakfast or a quick supper. Thanks for something so simple and good - why didn't I think of it? No changes.

Chocolate Chocolate Chip Sour Cream Pound Cake

Reviewed: Aug. 19, 2011
5 stars for instructions and 5 for the cake - congratulations. If you plan on making a cake like this, be prepared to spend the time and also no substitutes when it comes to ingredients. Having everything at room temperature is imperative. Pound type cakes requires a lot of beating and the results are wonderful - moist and delicious.

Oregon Salmon Patties

Reviewed: Aug. 17, 2011
A decent recipe as written for an every day meal - very taste especially with some good dijon mustard on top. Rather than parsely we prefer dill but other than that make as directed.

Caron's Kickin' Quinoa Salad

Reviewed: Aug. 14, 2011
A great way to use ordinary old tuna. Wasabi powder can be reduced to taste and, in my case, had to end up using some horseradish. That is the only change.

Chocolate Chip Orange Zucchini Bread

Reviewed: Aug. 6, 2011
Finally a zucchini bread that I like because it was never a favorite here. Guess it is the orange that makes the difference - gives it some zing and a more sophisticated flavor. Just too sweet tho - really do not need all that sugar so cut it back by 1/2 cup and also subsituted applesauce for half the oil. These are changes I normally make. This is so rich tasting we use it as a dessert.

Rum Raisin Brownies

Reviewed: Aug. 5, 2011
Wow! what a wonderful combination. I have a husband who loves rum so this is heaven - even with vanilla icecream. Could cut flour back by a tbsp. for a less cakey texture.

Tomato, Basil, and Feta Salad

Reviewed: Aug. 1, 2011
Good salad and needs full quantity of feta. Like the contributor pointed out it is better to add the oil at the end. I use white balsamic vinegar and a touch of honey and also cut oil back about 1 tbsp.

Canadian Shortbread 'Eh'

Reviewed: Aug. 1, 2011
Sorry, not often I write negative reviews but these are definitely not shortbreads. Perhaps they should be called maple cookies.

Apricot Cheesecake Bars

Reviewed: Jul. 26, 2011
Very easy and versatile bar but for us the apricot preserves are too sweet. Prefer to use lemon curd (you can buy it in the jam section).

Minty Nanaimo Bars

Reviewed: Jul. 22, 2011
On the rare occasion I make Nanaimo bars but when I do it is a minty one. The difference in mine is that I substitute creme de menthe liqueur for the milk and omit peppermint extract.

Lemon Blueberry Bread

Reviewed: Jul. 21, 2011
Love lemon breads and very fussy about the texture. Combined with blueberries it makes a wonderful treat - have also used raspberries. I prefer to cream the butter and sugar very well because I find the texture is much lighter. With the melted butter it tends to be a little heavy

Wonderful flavor and very moist. Please make exactly as directed. Chocolate and orange make good partners. Thanks for adding something worthwhile to my files.

Laura Shirk's Shortbread

Reviewed: Jul. 18, 2011
as written I am giving it a 4 -- this shortbread requires a lot of kneading to give it the right texture and scant measurments for flour.

Gazpacho a la Mrs. Landesman

Reviewed: Jul. 15, 2011
Not often I see gazpacho recipes here. This is similar to mine but I use V8 juice rather than tomato and 2 tbls. red wine vinegar. Whatever, it is very refreshing in summer and a great starter course. Our favorite meal is lunch with smoked salmon and black bread on the side.

Elegant Light Fruit Cake

Reviewed: Jul. 13, 2011
I am rating this a 3 but only because of the basic recipe that does need some changes. First, it needs butter and also too much cream of tartar which makes cakes dry. Going to play with this because I do like the ingredients.

All-Bran's Best Blueberry Muffins

Reviewed: Jun. 24, 2011
Not very often I give a 5 rating but these are excellent and similar to ones I have been making for years. Add orange juice makes a big difference to the flavor and would not recommend omitting it. When I am getting low on bran I substitute 1/2 cup of oats which works fine.

Easy French Dip Sandwiches

Reviewed: Jun. 23, 2011
The rating is as recipe is written but we prefer it with half red wine (or dry sherry) - gives it a more sophisticated twist. Anyway, so easy no matter which way and a great sandwich.
