Spaghetti Sauce with Ground Beef

Good basic sauce especially for a family with varied tastes For us it is a little too bland so always add hot pepper flakes and definitely freshly grated Parmesan on top....lots of it. Good starting recipe for a beginner and easy to make.

Baked Halibut Steaks

This is one of my favorite recipes and almost can't go wrong. Can even be used with haddock if halibut too expensive. Highly recommend and definitely deserves 5 stars

Chocolate Oil Cake

This is basically a very good and easy recipe...maybe not the best out there but certainly acceptable. For those who complained about it stick I would suggest you do not use butter to grease your cake tins. Lard or shortening is much more reliable because butter tends to burn and stick. At least this is what I find. Cake pan release like PAM is always better.

Best Carrot Cake Ever

This is the only carrot cake I make and that is requested by friends time and time again. The comment usually being......she makes the best carrot cake. Granted I have to cut back on the servings and if someone wants is healthier, i.e. less oil and sugar it still comes out perfectly. Also it is very easy to make and sometimes I do not even ice it.....it is very moist and a little heavy but then carrot cakes are not supposed to be light. Great recipe which I highly recommend. Do not be afraid to makes adjustments (within reason) to personal taste. I would not substitute all applesauce for oil because you are going to not have satisfactory results.

Colonial Pumpkin Bars

Cut oil in half and substitute applesauce and you can also cut back on sugar with no drastic effects. I add 1 tsp. of ginger as well and also sometimes a tablespoon of granted orange rind. This gives an otherwise ordinary cake/bar a more interesting flavor. Usually do not add the orange zest if adding ginger.......enjoy

Simple Beef Pot Roast

An excellent recipe for this type of roast. Those that complained that it was too well cooked.........well a pot roast is supposed to be cooked a long time. If you want a roast of beef (e.e. standing rib or sirloin) you do not cover it and it is a completely different type of cooking. Thanks for one of the few pot roasts that turn out very tender and still do not taste as tho it was stewed. Highly recommend this recipe and even a beginner cook will have total success if they follow his directions and not what they think.

Dad's Pumpkin Chiffon Pie

This is usually the only type of pumpkin pie my family liked. So light and not heavy after a big meal. I use a gingersnap pie crust. This type of crust does not go as soggy as the whole gingersnaps. Also I try to use imported (if possible) gingersnaps and English ones are usually the best.

Pineapple Dream Dessert

This is a full proof recipe and always turns out if followed exactly. Have never used the marshmallows and certainly you do not have to. DO NOT ATTEMPT TO USE FRESH PINEAPPLE AS SOMEONE DID AND OF COURSE IT DID NOT WORK.

Apple Lemon with Cinnamon Muffins

This is a very good muffin and like the texture. I know there are complaints about not enough lemony flavor. As a suggestion...if you rub the lemon zest into the sugar with your fingertips it releases the oils and hence you get more flavor.

Baked Pork Chops I

It is very rarely that I give a recipe that has soup in it a 5 star review but this is so tasty and tender. We can't stand dried out pork and this is certainly not dry. Followed some suggestions and added more sauteed mushrooms and, when I have it, definnitely white wine. Rich but worth it and great over creamy mashed potatoes. It is also good with mashed sweet potatoes.

Creamy Au Gratin Potatoes

The only change I make is to saute the onions first and also add a garlic clove (sauteed with onions). Wonderful potato dish but also make only occasionally because it is so rich. Never any problems with people complaining!!

Crunchy Cheesy Fish and Spinach Casserole

loved the combination of spinach and fish (only we use a lot more spinach). No changes. I did notice that one reviewer said she changed the egg for mayo...........she must have been reviewing a different recipe because no egg listed in this one. I just question this that is all.

Lemon Pepper Green Beans

Only adjustment is that we cut the lemon pepper in half but otherwise no changes needed for us. Highly recommend for a simple side dish that is also so easy to accomplish.

Delicious Banana Vegan Muffins (healthy and sugar free!)

Like the idea of all the healthy ingredients ( I am not vegan) but sometimes make vegan recipes. However, no way would I consider using 1 tbls. of baking soda ....just too much and leaves a very strong taste. Some extra baking powder and about 1 tsp. baking soda might work better. Not the best vegan recipe out there but could be with work.

Beef Bourguignon I

So many complaints about this beautiful classic recipe. Of course it takes time (very obvious if you pay careful attention to the method) but if you enjoy classic French cooking it is worth it. This is actually a stew but a fancy one and this recipe one of the better. Thank you for reminding me to start making this again..............even better reheated.

Carrot Pineapple Cake II

I like this cake because it does not have oil but the directions omit to say it should be baked in 2 8inch pans or equivalent otherwise you will have a mess and waste of expensive ingredients. Also, sugar can be cut back. For us any cake that is too sweet is not to our tastes but then we are in the minority. I might add it takes a bit longer to make a carrot cake with butter but the finished product is superior. Thanks for submission.

White Chocolate Cranberry Pumpkin Muffins

The main thing I like about this recipe is the addition of the orange juice and suggest adding orange rind to taste. I omit the white chocolate chips because they are sickenly sweet and as it is cut sugar to half. Of course we do not like overly sweet muffins and otherwise it is a grand recipe for my files.

Rosemary Lemon Grilled Chicken

It seems that I am building some great recipes on the grill lately. This one is no exception but can't imagine using butter (it usually burns too much when grilled) so agree with others that Olive Oil is best. Have all this fresh rosemary growing and trying to find recipes to use it up. Thanks and the only change is to use the oil. Sometimes I also use vegetable oil and that works fine.
