Rosemary Roasted Turkey

I started the turkey breast-side down, basting every 45 minutes or so. After that side browned perfectly I then put an aluminum foil tent over it. After 2 hours I turned the breast side up, basting again and then tenting it only after it browned well -- about 3 hours after starting. To get the areas under the wings browned I moved the wings outward. I inserted the oven temperature probe after 3 hours and it reached 180 degrees around 4 to 4 1/2 hours (15 pound turkey).

Photography Notes: I took this photo as the turkey was resting, right out of the oven (and when I put the Overnight Dinner Rolls in the oven!). I put carrots and celery in the pan to roast while the turkey was roasting.
