Caprese Salad

Insalata Caprese II

The caprese salad is a favorite in our household, always using fresh mozzarella balls. We prefer smaller tomatoes with the layer of mozzarella and fresh-from-the garden basil. We add Balsamic vinegar in the same amount as the olive oil and then sprinkle with salt and freshly-ground pepper. Best served with a small flat spatula.

Photography Notes: I took this photo just after assembling the tomato/cheese/basil combination. After the salad is served, we often finish the olive oil/balsamic vinegar that remains on the serving plate with bread slices!
