Peach Cake II

Tasty cake- very easy and quick. I used 4 fresh peaches to make up the 2 cups. Two changes I will be making next time: less salt! I think 1/2-3/4 tsp would work. Also a lower cooking temp. I discovered halfway through cooking that the top was going to burn if I kept it at 375, so I lowered it to 350 around the 25 minutes mark. I will definitely be making this again with these adjustments.

Icelandic Christmas Cake

This is VERY tasty! I made it for my son's country report and snuck a piece before school. I used ground cardamom (1 tsp) as well and added it to the dry ingredients. The slight taste of lemon suits it very well. The texture is so moist, though very crumbly to cut. A good sharp bread knife would work best I think.

Jenny's Jambalaya

This is a great, easy recipe! I didn't have the precooked meat, so I cooked it with the onions at the beginning. I used Italian sausage and cut my chicken breasts in small chunks. (Only b/c I was too lazy to shred). The amount of heat is just right for me, but I tend to like milder flavors, so if you want to add slightly more hot sauce it will work if that's your taste. I will make this again and again, great recipe!

Fudgy Chocolate Chip Muffins

So incredibly good! I would suggest doubling the recipe because these will go fast. I wanted to freeze half, but everyone ate them before I could. I used half the cinnamon, though I think the full amount would be great as well. I used chunky applesauce. Very chocolately- enough for a dessert, but great for a breakfast treat. I'll be making these forever!

Original Homemade Italian Beef

Really Good! I used all 3 of the Italian seasoning packets, which were .68 oz each, and it was perfect for us. I used a cup of beer instead of the water. I don't like real spicy food, so I added about 1/3 of the jar of peppers and a couple tablespoons of the juice. This was just right for our tastes- a little kick at the end, but mellow enough for the kids. Club rolls suited the beef perfectly. I'll be making this again for sure.

Iced Pumpkin Cookies

Very, very good! Nice, cakey texture. My son's kindergarten class gobbled these up (as well as the parents!) I tinted the icing half orange and left the other half white and it looked very pretty. These will be added into the holiday cookie collection, and probably will be made throughout the year as well.

Zesty Slow Cooker Chicken Barbecue

WOW! Very, very tasty and couldn't be any easier. I just love being able to take chicken breasts from the freezer and throw them in the crockpot. I need more recipes like this! My kids ate this and declared it "super-duper good!"

Slow Cooker Stuffing

Absolutely fantastic! I hesitated using a new recipe for Thanksgiving, but went ahead because of all the great reviews of this recipe. I left out the mushrooms and ended up using closer to 3 1/2 cups of broth. With a newer model crock pot, like I used, the cooking time is definitely on the shorter side. Mine was ready way ahead of time, and sat in the crock on warm for hours, but was still incredibly moist and delicious. No leftovers!

Bourbon Chicken Dish

EASY AND SUPER! As I was throwing this dish together, I thought it would never work because it was way too easy. It turned out to be fantastic! Chicken was super-moist and the over all flavor delicious. The whole family, including two picky kids, loved it. This recipe is definitely a keeper and will be going into the 'rotation'. :)

Self-Filled Cupcakes I

ABSOLUTELY FANTASTIC AND SIMPLE!! The recipe makes more than 12, I got 21 generously sized cupcakes. The filling is awesome and makes more than needed as well. I saved the extra for almost a complete other batch, which I froze. I used mini chips, and had no problems with the filling sinking, as other people seemed to. I used a chocolate frosting and a devils food cake mix. I'm going to try out the "self filled cupcakes II" recipe next time, it looks about the same as this one, but it probably makes less filling. This recipe will be used again and again for sure.
