Chicken Salad Sandwiches

Great recipe! A couple of modifications I made were that I did not use dried cranberries or golden raisins (was out of both), but I did chop up half of a Rome apple and added about 1/4 cup chopped walnuts instead of almonds. I also added a heaping tablespoon more of the salad dressing than is called for, because I like my chicken salad to be more "blended" and cohesive. Overall, great recipe!

Candied Apples III

I made these last night for our Halloween party. They were very good, but I do have a couple of comments: 1) Based on other reviews, I did double the amount of candies (I used 2 bags of cinnamon disks) and added a little more water, and it only coated 6 apples; and 2) I read where one reviewer said that it stuck to the wax paper, and another reviewer said it just needed to cool completely. I thought about spraying the wax paper lightly with cooking spray, but decided not to. I would recommend doing so in the future, as mine cooled for several hours, and the paper still came off with the apple.

Quick Classic Gazpacho

Great recipe!! I did do a few different things to make it my own (which might be reflected in the picture I submitted?). I sided it with sliced avocado, stuffed crabs, and wheat crackers. I was not able to find seedless cucumbers at my market, so I used a regular cucumber, halved it, sliced it lengthwise, then scooped out the seeds with a melon baller. Changes I made: - Put half of everything in the blender to smooth it out, then added the other half of the tomatoes for a few seconds just to chop them down a bit. - Used lime juice instead of sherry vinegar. - Added about 1/2-1 cup V8 juice, and 1/2 tsp. each of cumin, curry, and cayenne pepper to give it a slight kick. - Used 2 serano peppers instead of 1 jalepeno (it's what I had on-hand) and used cilantro. My husband LOVES this recipe, and he was looking forward to it again this summer!
