Pan-fried Polenta with Corn, Kale and Goat Cheese

Loved it! For those too lazy to follow these long winded directions, you can buy dried polenta and it cooks in about 10 mins not 30. Resting in the fridge over-night might also be a useful thing to do in advance just to save time.

Stuffed Peppers My Way

Very good and simple. We added some shredded cheese on top. We also made it with quinoa instead of rice. Next time I will add a bit more spice and maybe other veggies. Still, this was a very yummy one.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Incredible soup. Didn't have ginger, but I used a dash or two of pumpkin pie seasoning which was nice. Don't use Feta, it's not necessary. Maybe yogurt, but it tastes delicious without anything else. Also, it might be nice with some cranberries next time.

Big Al's K.C. Bar-B-Q Sauce

An outstanding BBQ sauce. I don't own molasses, so I didn't include it. I was planning on substituting more brown sugar, but it actually didn't need it. It tasted great as was.

Butternut Squash Soup with Spinach Ravioli

Very good. Used tortellini by mistake, which was def not as good as ravioli. Used two packages of frozen squash, should have used three. Used 3 cups of chicken stock - which was good. Could use more cumin. Cut the water by 1.5 cups. Add something else flavor-wise. Dash of hot sauce?

Very good, but probably better to cook the chicken in the sauce a bit longer rather than cook it plain. And probably worth putting over a starch only to absorb some juices.

Roasted Red Pepper Cream Sauce

Not a bad sauce, but very creamy. Used a 12oz jar of peppers, could have used a 2nd or sun-dried tomatoes. Could cut the cream in half. Also, add more cheese, along with high quality cheese. Also, I added some corn starch, but add that to the cream while it's cold. I used fat-free half and half, that changes the texture more than the flavor.

It was very delicious. If you want to cut back on fat, eliminate the pesto & olive oil and instead put a dash of balsamic vinegar at the end.

This was excellent. To make this MUCH healthier I subbed Skim Milk for Half and Half. The taste was still very good, but it was a bit thin. Perhaps next time I will cut the quantity of milk a little or just up the rue...

This was very good. I baked instead of grilled the chicken, still delicious. Used apple vinegar instead of regular cause that's what I had in the house. Still great.

Couscous, Cranberry, and Feta Salad

Very wonderful flavor. You need to cut the water in half though, it should be a 1:1 ratio between cous cous and water, even with the dried cranberries. Also, I subbed cropped spinach for cucumbers and it was delicious.
